🍽️ Chicken with Green Asparagus and Croquettes in Orange Hollandaise

Ingredients
- chicken breast fillets 600 g
- salt pinch
- pepper, black ground pinch
- green asparagus 2 bunch
- oranges 1 pc.
- vegetable broth 250 ml
- honey 4 tsp
- croquettes 500 g
- butter 200 g
- eggs 2 pc.
- yogurt, plain 2 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Wash the chicken thoroughly and pat it dry with a kitchen towel.
- 3. Season the chicken with salt and pepper.
- 4. Wash the asparagus and peel the bottom third.
- 5. Remove the woody ends from the asparagus.
- 6. Wash the orange and grate about one teaspoon of zest.
- 7. Halve the orange and squeeze out the juice.
- 8. Place the chicken in a baking dish.
- 9. Cook the chicken in the oven for about 10 minutes.
- 10. Mix the broth with the honey.
- 11. Place the croquettes evenly on a baking sheet lined with baking paper.
- 12. Turn the chicken over in the baking dish.
- 13. Place the asparagus next to the chicken.
- 14. Pour the honey-broth mixture over the chicken and asparagus.
- 15. Put the croquettes in the oven.
- 16. Cook everything for another 15 minutes.
- 17. Turn the chicken and asparagus in between if necessary.
- 18. Melt the butter in a pot over medium heat.
- 19. Separate the eggs and take the yolks.
- 20. Puree the egg yolks with the yogurt and two tablespoons of orange juice in a tall container until creamy.
- 21. Lightly season the egg yolk mixture with salt and pepper.
- 22. Add the liquid butter drop by drop first.
- 23. Then add the butter in a thin stream while pureeing constantly.
- 24. Stop adding the butter when the sauce thickens.
- 25. Season the sauce with the orange zest, salt, and pepper.
- 26. Keep the sauce warm until you serve it.
- 27. Plate the chicken, asparagus, and croquettes with the orange hollandaise.
