  1. 1. Preheat the oven to 180 degrees Celsius with fan.
  2. 2. Wash the chicken thoroughly and pat it dry with a kitchen towel.
  3. 3. Season the chicken with salt and pepper.
  4. 4. Wash the asparagus and peel the bottom third.
  5. 5. Remove the woody ends from the asparagus.
  6. 6. Wash the orange and grate about one teaspoon of zest.
  7. 7. Halve the orange and squeeze out the juice.
  8. 8. Place the chicken in a baking dish.
  9. 9. Cook the chicken in the oven for about 10 minutes.
  10. 10. Mix the broth with the honey.
  11. 11. Place the croquettes evenly on a baking sheet lined with baking paper.
  12. 12. Turn the chicken over in the baking dish.
  13. 13. Place the asparagus next to the chicken.
  14. 14. Pour the honey-broth mixture over the chicken and asparagus.
  15. 15. Put the croquettes in the oven.
  16. 16. Cook everything for another 15 minutes.
  17. 17. Turn the chicken and asparagus in between if necessary.
  18. 18. Melt the butter in a pot over medium heat.
  19. 19. Separate the eggs and take the yolks.
  20. 20. Puree the egg yolks with the yogurt and two tablespoons of orange juice in a tall container until creamy.
  21. 21. Lightly season the egg yolk mixture with salt and pepper.
  22. 22. Add the liquid butter drop by drop first.
  23. 23. Then add the butter in a thin stream while pureeing constantly.
  24. 24. Stop adding the butter when the sauce thickens.
  25. 25. Season the sauce with the orange zest, salt, and pepper.
  26. 26. Keep the sauce warm until you serve it.
  27. 27. Plate the chicken, asparagus, and croquettes with the orange hollandaise.
