🍽️ Chicken Tikka Sandwich

Ingredients
- chicken breast fillets 300 g
- lemons 1 pc.
- onions, yellow 1 pc.
- garlic cloves 1 pc.
- sunflower oil 1 tbsp
- curry powder 1 tsp
- yogurt, plain 2 tbsp
- crème fraîche 3 tbsp
- salt pinch
- pepper, black ground pinch
- cucumbers 0.25 pc.
- mango 0.5 pc.
- toast bread 8 slices
Instructions
- 1. Rinse the chicken breast under running water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the chicken into small pieces.
- 4. Halve the lemon and squeeze out the juice.
- 5. Halve the onion and peel it.
- 6. Dice the onion into small cubes.
- 7. Peel the garlic.
- 8. Finely chop the garlic.
- 9. Heat the oil in a pan over medium to high heat.
- 10. Sauté the chicken pieces for about 3 to 4 minutes until browned all around.
- 11. Add the onion and garlic to the pan.
- 12. Season the mixture with curry powder.
- 13. Cook everything for another minute.
- 14. Stir in the yogurt and crème fraîche.
- 15. Let the sauce simmer for about 3 minutes.
- 16. Add a bit of lemon juice.
- 17. Season to taste with salt and pepper.
- 18. Allow the filling to cool.
- 19. Peel the cucumber.
- 20. Cut the cucumber lengthwise into two halves.
- 21. Dice the cucumber halves.
- 22. Peel the mango.
- 23. Remove the flesh from the pit.
- 24. Dice the mango flesh.
- 25. Mix the cucumber and mango cubes with the cold chicken mixture.
- 26. Spread the filling on 4 slices of bread.
- 27. Top the sandwiches with the remaining slices of bread.
- 28. Cut the sandwiches diagonally in half.
- 29. Serve the sandwiches.
