  1. 1. Rinse the chicken breast under running water.
  2. 2. Pat the meat dry with a kitchen towel.
  3. 3. Cut the chicken into small pieces.
  4. 4. Halve the lemon and squeeze out the juice.
  5. 5. Halve the onion and peel it.
  6. 6. Dice the onion into small cubes.
  7. 7. Peel the garlic.
  8. 8. Finely chop the garlic.
  9. 9. Heat the oil in a pan over medium to high heat.
  10. 10. Sauté the chicken pieces for about 3 to 4 minutes until browned all around.
  11. 11. Add the onion and garlic to the pan.
  12. 12. Season the mixture with curry powder.
  13. 13. Cook everything for another minute.
  14. 14. Stir in the yogurt and crème fraîche.
  15. 15. Let the sauce simmer for about 3 minutes.
  16. 16. Add a bit of lemon juice.
  17. 17. Season to taste with salt and pepper.
  18. 18. Allow the filling to cool.
  19. 19. Peel the cucumber.
  20. 20. Cut the cucumber lengthwise into two halves.
  21. 21. Dice the cucumber halves.
  22. 22. Peel the mango.
  23. 23. Remove the flesh from the pit.
  24. 24. Dice the mango flesh.
  25. 25. Mix the cucumber and mango cubes with the cold chicken mixture.
  26. 26. Spread the filling on 4 slices of bread.
  27. 27. Top the sandwiches with the remaining slices of bread.
  28. 28. Cut the sandwiches diagonally in half.
  29. 29. Serve the sandwiches.
