🍽️ Sweet and Sour Chicken with Glass Noodles, Mushrooms, and Cashews

Ingredients
- Organic limes 1 pc.
- Soy sauce 20 ml
- Chili, ground pinch
- Honey 1 tbsp
- Chicken breast fillets 600 g
- Cashew kernels 5 tbsp
- Button mushrooms, brown 500 g
- Oil 2 tbsp
- Salt 1 tbsp
- Glass noodles 200 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius.
- 2. Thoroughly rinse the lime.
- 3. Grate about one teaspoon of the lime zest.
- 4. Cut the lime in half and squeeze out the juice.
- 5. In a baking dish, mix half of the lime juice, the lime zest, soy sauce, chili, and one tablespoon of honey.
- 6. Rinse the chicken breast fillets.
- 7. Pat the fillets dry with a kitchen towel.
- 8. Cut the fillets into thirds.
- 9. Place the chicken pieces into the marinade.
- 10. Cook the chicken in the oven for about 17 minutes.
- 11. Roughly chop the cashew nuts.
- 12. Set the cashews aside.
- 13. Clean the mushrooms with a kitchen towel.
- 14. Cut the mushrooms into quarters or sixths, depending on their size.
- 15. Heat two tablespoons of oil in a pan over high heat.
- 16. Fry the mushrooms and cashews together for about 3 minutes.
- 17. Take the chicken out of the oven.
- 18. Add the chicken to the mushroom mixture.
- 19. Fry everything together for about 3 minutes.
- 20. Season with some lime juice, salt, pepper, and a pinch of sugar.
- 21. Bring about 600 milliliters of salted water to a boil in a pot.
- 22. Place the glass noodles in a bowl.
- 23. Pour the boiling salted water over the noodles.
- 24. Let the noodles steep for about 5 minutes.
- 25. Rinse the parsley.
- 26. Shake the parsley dry.
- 27. Pick the parsley leaves off the stems.
- 28. Chop the parsley leaves finely.
- 29. Drain the glass noodles.
- 30. Plate the noodles.
- 31. Distribute the chicken and mushrooms on top.
- 32. Garnish the dish with the chopped parsley.
- 33. Enjoy the sweet and sour chicken with glass noodles, mushrooms, and cashews.
