  2. 2. Rinse the thyme thoroughly and pat it dry with kitchen paper.
  3. 3. Strip the thyme leaves from the stems and chop them finely.
  4. 4. Add chili powder, sugar, paprika powder, the chopped thyme, and one teaspoon of salt to a bowl.
  5. 5. Mix the spices with oil until a uniform spice paste forms.
  6. 6. Rinse the chicken drumsticks and pat them dry.
  7. 7. Coat the chicken drumsticks evenly with half of the spice paste.
  8. 8. Place the chicken drumsticks in a baking dish.
  9. 9. Bake the chicken in the oven for about 30 minutes.
  10. 10. Save the remaining spice paste for later.
  11. 11. Increase the oven temperature to 240 degrees.
  12. 12. Turn the chicken drumsticks in the dish.
  13. 13. Brush the chicken drumsticks with the saved spice paste.
  14. 14. Bake the chicken for another 10 to 15 minutes until golden brown.
  15. 15. Check for doneness: Cut into a thick part and look for clear meat juices.
