🍽️ Chicken breast with creamy mustard-onion sauce and Spätzle

Ingredients
- onions, yellow 250 g
- oil 4 tbsp
- mustard 1 tbsp
- vegetable broth 700 ml
- salt pinch
- pepper, black ground pinch
- spätzle 800 g
- chives, fresh 10 g
- chicken breast fillets 600 g
- heavy cream 200 ml
- cornstarch 2 tbsp
- roasted onions 4 tbsp
Instructions
- 1. Halve the onions and remove the outer skins.
- 2. Place the onion pieces into the mixing bowl.
- 3. Chop the onions for 8 seconds on speed 8.
- 4. Use a spatula to push any sticky onion bits down from the sides of the bowl.
- 5. Add 2 tablespoons of oil.
- 6. Sauté the onions for 3 minutes at 120 degrees Celsius on speed 1.
- 7. Add mustard, hot vegetable broth, salt, and pepper to the bowl.
- 8. Fill the deep steam cooking insert with the Spätzle.
- 9. Place the steam cooking insert onto the pot.
- 10. Steam the Spätzle for 15 minutes on the steam setting with reverse blade action.
- 11. Wash the chives under running water.
- 12. Shake the chives dry.
- 13. Cut the chives into fine rings.
- 14. Rinse the chicken breasts.
- 15. Pat the chicken breasts dry with a kitchen towel.
- 16. Gently flatten the chicken breasts by pounding them with the flat of your hand.
- 17. Season the chicken breasts with salt.
- 18. Heat 2 tablespoons of oil in a frying pan over medium heat.
- 19. Fry the chicken breasts on all sides for about 4 minutes.
- 20. Remove the breasts from the pan and place them on a plate.
- 21. Let the chicken breasts rest for a moment.
- 22. Mix cornstarch with a little cold water in a small bowl.
- 23. Set the steam cooking insert aside.
- 24. Add the cream and the cornstarch mixture to the sauce.
- 25. Heat the sauce for 2 minutes at 100 degrees Celsius on speed 1 with reverse blade action.
- 26. Season the sauce to taste with salt and pepper.
- 27. Plate the chicken with the sauce and Spätzle.
- 28. Garnish the dish with fried onions and the prepared chives.
- 29. Serve the meal and enjoy!
