🍝 Crispy Sesame Chicken on Spaghetti with Broccoli

Ingredients
- sesame, white 1 tbsp
- salt 1 tbsp
- broccoli 2 pcs
- organic limes 1 pcs
- honey 1 tbsp
- chicken breast fillets 600 g
- oil 3 tbsp
- onions, red 2 pcs
- ginger, fresh 10 g
- spaghetti 500 g
- cilantro, fresh 20 g
- pepper, black ground pinch
Instructions
- 1. Preheat the oven to 150 degrees Celsius with fan setting.
- 2. Toast the sesame seeds in a hot pan for 1 to 2 minutes.
- 3. Remove the sesame seeds from the pan and let them cool on a plate.
- 4. Fill a pot with 5 liters of water and add salt.
- 5. Bring the salted water to a boil.
- 6. Rinse the broccoli under running water.
- 7. Break the broccoli into very small florets.
- 8. Boil the broccoli florets in the boiling salted water for 2 to 3 minutes.
- 9. Remove the broccoli from the water using a slotted spoon.
- 10. Let the broccoli drain in a colander.
- 11. Bring the salted water in the pot back to a boil.
- 12. Rinse the lime under running water.
- 13. Cut the lime in half.
- 14. Squeeze the juice out of the lime.
- 15. Take a bowl and add the cooled sesame seeds.
- 16. Add 2 tablespoons of lime juice to the sesame mixture.
- 17. Season the mixture with a little salt.
- 18. Add honey to the sesame mixture.
- 19. Mix all ingredients in the bowl thoroughly.
- 20. Rinse the chicken under running water.
- 21. Pat the chicken dry with kitchen paper.
- 22. Cut the chicken into strips about 0.4 cm thick.
- 23. Do not cut the meat completely through, but only deep into it.
- 24. Add 2 tablespoons of oil to the hot pan.
- 25. Heat the oil at high temperature.
- 26. Salt the chicken breast.
- 27. Fry the chicken breast on all sides.
- 28. Fry the meat for about 4 minutes until golden brown.
- 29. Remove the fried meat from the pan.
- 30. Place the meat on a plate.
- 31. Spread the sesame-lime mixture evenly over the meat.
- 32. Press the mixture slightly to form a crust.
- 33. Place the meat in the preheated oven.
- 34. Cook the chicken in the oven for 10 to 12 minutes.
- 35. Remove the pan from the oven and leave it there.
- 36. Cut the red onions in half.
- 37. Peel the onions.
- 38. Cut the onions into thin strips.
- 39. Peel the ginger.
- 40. Chop the ginger finely.
- 41. Add 1 tablespoon of oil to the pan with the pan drippings.
- 42. Fry the onion strips and ginger over medium heat.
- 43. Cook the vegetables for about 4 minutes.
- 44. Toss the vegetables in the pan occasionally.
- 45. Add the drained broccoli to the vegetables after 3 minutes.
- 46. Cook the broccoli for another 1 minute.
- 47. Boil the spaghetti in the boiling salted water for 8 to 9 minutes.
- 48. Rinse the coriander under running water.
- 49. Shake the coriander dry.
- 50. Remove coarse stems from the coriander.
- 51. Chop the coriander finely.
- 52. Save about 100 milliliters of pasta cooking water in a cup.
- 53. Drain the cooked spaghetti in a colander.
- 54. Add the spaghetti to the pan with the vegetables.
- 55. Mix the pasta thoroughly with the vegetables.
- 56. Add some of the saved cooking water if the pasta seems too dry.
- 57. Add the remaining lime juice to the pasta.
- 58. Season the pasta with salt and pepper.
- 59. Taste the pasta and adjust seasoning if needed.
- 60. Serve the pasta on plates.
- 61. Place the sesame chicken next to the pasta.
- 62. Garnish the dish with the fresh coriander.
