🍽️ Chicken with Fried Gnocchi and Grape Salsa

Ingredients
- Salt pinch
- Parsley, fresh 20 g
- Grapes, dark 400 g
- Balsamic vinegar, light 1 tbsp
- Olive oil 2 tbsp
- Pepper, black ground pinch
- Chicken breast fillets 600 g
- Chicken seasoning salt pinch
- Oil 6 tbsp
- Shallots 8 pcs.
- Heavy cream 200 ml
- Gnocchi, fresh 600 g
- Butter 2 tbsp
Instructions
- 1. Bring about 4 liters of salted water to a boil in a pot. Thoroughly clean the parsley, pluck off the leaves and chop finely. Wash the grapes and halve them. Mix everything in a bowl with balsamic vinegar, olive oil, salt and pepper.
- 2. Wash the chicken meat, pat dry and rub with chicken seasoning and 1 tablespoon of oil. Heat 2 tablespoons of oil in a pan and sear the chicken on high heat for about 3 minutes. Then reduce the temperature and cook the chicken covered for approx. 6 minutes.
- 3. Peel the shallots and quarter them lengthwise. Heat 2 tablespoons of oil in another pan over medium heat and fry the shallots for about 3 minutes. Then deglaze with cream and let simmer for approx. 4 minutes until the sauce thickens.
- 4. Boil the gnocchi in the bubbling salted water for about 3 minutes. Then drain the gnocchi in a sieve and let them drip dry.
- 5. Add the chicken to the shallots in the pan and season with salt and pepper.
- 6. Heat 1 tablespoon of oil and 2 tablespoons of butter in the same pan. Add the gnocchi, salt and fry until crispy for about 4 to 5 minutes. Then arrange the gnocchi, chicken and grape salsa on plates and serve. Enjoy your meal!
