  1. 1. Rinse the chicken fillets under cold water and pat them completely dry with a kitchen towel.
  2. 2. Season the fillets generously with salt and pepper and set them aside to reach room temperature.
  3. 3. Halve the shallots, peel them, and cut them into fine cubes.
  4. 4. Peel the garlic cloves and chop them finely.
  5. 5. Wash the thyme sprigs, shake off excess water, strip off the leaves, and chop them finely.
  6. 6. Heat three tablespoons of oil in a large frying pan over high heat.
  7. 7. Fry the chicken fillets in the hot fat on all sides for about two minutes until golden brown and crispy.
  8. 8. Remove the fillets from the pan and place them on a plate.
  9. 9. Leave the pan with the cooking juices uncleaned.
  10. 10. Add the diced shallots and chopped garlic to the hot pan.
  11. 11. Sauté the vegetables on medium heat for about four minutes until translucent.
  12. 12. Deglaze the mixture with white wine and let the liquid reduce almost completely.
  13. 13. Add the cream and simmer the sauce for three to four minutes until it thickens.
  14. 14. Stir the Dijon mustard into the sauce.
  15. 15. Reduce the heat to low and season the sauce with salt and pepper to taste.
  16. 16. Place the chicken fillets back into the pan into the sauce.
  17. 17. Cover the pan and let the meat cook through for two to three minutes.
  18. 18. Plate the finished fillets and serve them with the remaining mustard sauce.
