  1. 1. Cut the onion in half and peel off the outer skin. Dice the onion into very small cubes.
  2. 2. Peel the garlic cloves and chop them finely.
  3. 3. Rinse the chicken meat under cold water. Pat it completely dry with a kitchen towel.
  4. 4. Cut the chicken meat into cubes of approx. 2 cm.
  5. 5. Wash the fresh coriander. Shake it dry so no water remains on the leaves.
  6. 6. Pluck the green coriander leaves off the stems and set them aside.
  7. 7. Rinse the limes under running water.
  8. 8. Finely grate the green zest from one whole lime (make sure to use only the green layer).
  9. 9. Squeeze the juice from the limes and set it aside.
  10. 10. Place the rice in a pot and cover it with approx. 700 ml of salted water.
  11. 11. Bring the water with the rice to a boil.
  12. 12. Cook the rice for approx. 12 minutes until it is soft.
  13. 13. Season the chicken meat with a pinch of salt.
  14. 14. Heat 2 tablespoons of oil in a separate pot over medium to high heat.
  15. 15. Fry the chicken meat in the hot oil for approx. 2 to 3 minutes.
  16. 16. Remove the fried chicken from the pot and place it on a plate.
  17. 17. Add another 2 tablespoons of oil to the same pot and heat it.
  18. 18. Fry the diced onion and chopped garlic for approx. 2 minutes.
  19. 19. Deglaze the onions with the lime juice.
  20. 20. Stir the coconut milk into the sauce.
  21. 21. Add the previously fried chicken and the lime zest back into the pot.
  22. 22. Let the sauce simmer gently for approx. 5 minutes.
  23. 23. Season the sauce with salt and pepper to taste.
  24. 24. Fluff the finished rice with a fork.
  25. 25. Distribute the rice onto the plates.
  26. 26. Pour the chicken with the lime sauce over the rice.
  27. 27. Sprinkle the dish with the fresh coriander leaves.
