🍽️ Chicken Apricot Skillet with Basmati Rice

Ingredients
- chicken breast fillets 600 g
- paprika, sweet 1 tsp
- cinnamon pinch
- chili, ground pinch
- cumin 0.25 tsp
- salt pinch
- pepper, black ground pinch
- onions, red 2 pcs
- garlic cloves 1 pc
- carrots 5 pcs
- apricots, fresh 250 g
- basmati rice 300 g
- oil 2 tbsp
- vegetable broth 150 ml
Instructions
- 1. Rinse the chicken meat under cold water.
- 2. Dry the meat with kitchen paper.
- 3. Cut the chicken meat into cubes of about 2 cm.
- 4. Mix paprika powder, cinnamon, chili, cumin, salt, and pepper in a bowl.
- 5. Rub the chicken cubes with the spice mixture.
- 6. Set the seasoned chicken pieces aside.
- 7. Halve the onions and peel them.
- 8. Cut the peeled onions into strips.
- 9. Peel the garlic.
- 10. Finely chop the garlic.
- 11. Wash the carrots thoroughly.
- 12. Peel the carrots.
- 13. Cut off the ends of the carrots.
- 14. Slice the carrots into rings.
- 15. Halve the apricots.
- 16. Remove the pits from the apricot halves.
- 17. Cut the pitted apricots into wedges.
- 18. Put the rice into a pot.
- 19. Pour about 700 ml of salted water over the rice.
- 20. Bring the rice and water mixture to a boil.
- 21. Cover the pot with a lid.
- 22. Cook the rice over medium heat for about 12 minutes.
- 23. Heat the oil in a skillet over high heat.
- 24. Fry the chicken meat in the hot skillet for about 4 minutes until golden brown.
- 25. Remove the fried chicken from the skillet.
- 26. Set the chicken aside.
- 27. Reheat the skillet over medium heat.
- 28. Fry the onions, garlic, and carrots in the cooking fat for about 3 minutes.
- 29. Add the apricots to the skillet.
- 30. Fry the apricots for about 1 minute.
- 31. Return the chicken meat to the skillet.
- 32. Prepare the vegetable broth according to package instructions.
- 33. Pour the prepared vegetable broth into the skillet.
- 34. Cover the skillet.
- 35. Let the dish cook for about 5 minutes.
- 36. Season the chicken apricot skillet to taste.
- 37. Serve the skillet together with the rice on plates.
