  1. 1. Cut the onion in half and peel it. Dice the onion into coarse chunks. Peel the garlic clove and slice it thinly. Heat two tablespoons of oil in a pot. Add the onions and garlic and sauté them for about two minutes.
  2. 2. Pour the almond drink and cashew nuts into the pot. Let the mixture simmer gently on low heat for about twenty minutes.
  3. 3. Clean the mushrooms if necessary using a kitchen towel. Cut the mushrooms into quarters or eighths depending on their size. Place the minced meat in a bowl. Add mustard, one egg, ground almonds, and thyme. Mix everything thoroughly.
  4. 4. Season the meat mixture with salt and pepper. Shape the mixture into twelve small balls.
  5. 5. Heat two tablespoons of oil in a frying pan over medium to high heat. Fry the meatballs for about five minutes, turning them to brown on all sides. Remove the balls from the pan and place them on a plate.
  6. 6. Heat one more tablespoon of oil in the same pan. Fry the mushrooms vigorously for about three minutes.
  7. 7. Add the fried meatballs and the meat broth to the pan. Let everything simmer for about five minutes.
  8. 8. Stir the cashew nuts and almond drink in the pot until you have a creamy sauce. Season the sauce with salt and pepper.
  9. 9. Pour the cashew cream over the meatballs in the pan. Bring the sauce to a boil.
  10. 10. Wash the parsley and dry it thoroughly. Pluck the leaves from the stems and chop them finely.
  11. 11. Serve the meatballs Stroganoff on plates. Garnish the dish with the chopped parsley. Enjoy your meal!
