🍽️ Meatballs with Beetroot Vegetables

Ingredients
- potatoes, mainly waxy 1 kg
- salt pinch
- onions, yellow 1 pc
- garlic cloves 1 pc
- dill, fresh 20 g
- beetroot, pre-cooked 500 g
- minced meat, mixed 500 g
- breadcrumbs 2 tbsp
- eggs 1 pc
- pepper, black ground pinch
- oil 2 tbsp
- whipping cream 200 g
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Peel the potatoes.
- 3. Cut the potatoes into small cubes.
- 4. Fill a pot with water and add some salt.
- 5. Bring the water to a boil.
- 6. Add the potato cubes to the boiling water.
- 7. Place the lid on the pot.
- 8. Cook the potatoes for about 20 minutes.
- 9. Drain the water using a colander.
- 10. Let the potatoes steam dry for a short moment.
- 11. Halve the onion.
- 12. Peel the onion.
- 13. Dice the onion into small cubes.
- 14. Peel the garlic.
- 15. Finely chop the garlic.
- 16. Wash the dill.
- 17. Dry the dill with a cloth.
- 18. Remove the thick stems from the dill.
- 19. Chop the dill.
- 20. Let the beetroot drain.
- 21. Cut the beetroot into cubes.
- 22. Take a large bowl.
- 23. Add the minced meat to the bowl.
- 24. Take half of the diced onions.
- 25. Add the diced onions to the minced meat.
- 26. Add the chopped garlic.
- 27. Add the chopped dill.
- 28. Add the breadcrumbs.
- 29. Add the egg.
- 30. Season with salt.
- 31. Season with pepper.
- 32. Mix all ingredients well.
- 33. Form small balls from the mixture.
- 34. Make sure the balls are about 4 cm in size.
- 35. Take a frying pan.
- 36. Add oil to the pan.
- 37. Heat the oil over high heat.
- 38. Add the meatballs to the pan.
- 39. Fry the meatballs on all sides.
- 40. Fry them for about 5 minutes.
- 41. Add the beetroot to the pan.
- 42. Add the remaining diced onions to the pan.
- 43. Fry everything for another 2 minutes.
- 44. Season the mixture with salt.
- 45. Season the mixture with pepper.
- 46. Deglaze the pan with cream.
- 47. Place the lid on the pan.
- 48. Simmer the dish over medium heat.
- 49. Cook it for about 5 minutes.
- 50. Take the plates.
- 51. Place the meatballs on the plates.
- 52. Add the beetroot.
- 53. Serve the boiled potatoes alongside.
