  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Mix Gouda, cold butter, flour, and a pinch of salt in a bowl until you have a smooth dough.
  3. 3. Wrap the dough in cling film and place it in the refrigerator for 30 minutes.
  4. 4. Peel an onion and grate it coarsely into a bowl.
  5. 5. Add minced meat, breadcrumbs, and an egg to the onion and mix everything well.
  6. 6. Season the mixture with salt, pepper, and paprika powder.
  7. 7. Heat oil in a frying pan over medium heat.
  8. 8. Form 16 small meatballs using wet hands.
  9. 9. Fry the balls on all sides for about 6 minutes.
  10. 10. Let the meatballs cool down.
  11. 11. Roll out the chilled dough on a work surface dusted with a little flour to a thickness of 4 millimeters.
  12. 12. Cut out 16 cookies using a fluted cutter (approx. 6 cm diameter).
  13. 13. Place the cookies on a baking sheet lined with baking paper.
  14. 14. Bake the cookies in the oven for approx. 8 minutes.
  15. 15. Let the cheese crackers cool down.
  16. 16. Place a meatball on each cheese cracker.
  17. 17. Secure the balls with a wooden skewer.
  18. 18. Serve the small snacks.
