  1. 1. Peel the potatoes and cut them into small cubes. Trim the ends of the beans and cut them into diamond shapes. Halve the onion, peel it, and dice it. Wash the parsley, shake it dry, pluck the leaves from the stems, and chop them roughly.
  2. 2. Place the potatoes, beans, and onions in a large pot, cover with salted water, and bring to a boil. Cook covered on medium heat for about 10 minutes. Drain everything in a colander and reserve 5 tablespoons of the cooking water in a cup.
  3. 3. In a bowl, mix the ground meat with the parsley, egg, breadcrumbs, and about 1 teaspoon of salt, then shape into thumb-sized rolls.
  4. 4. Heat the oil in a pan over high heat and fry the beef rolls all around for about 7 minutes. Then remove from the heat and let them rest covered.
  5. 5. In a bowl, mix mustard, honey, 2 tablespoons of vinegar, cream cheese, and the reserved cooking water into a smooth sauce. Then fold in the potatoes, beans, and onions, seasoning with salt and pepper.
  6. 6. Serve the potato-bean salad on plates, place the beef rolls next to it, and enjoy your meal!
