  2. 2. Cover the bowl and let the dough rest for 20 minutes.
  3. 3. Place the feta cheese in a sieve and let it drain.
  4. 4. Halve the onion, peel it, and dice it finely.
  5. 5. Melt 2 tablespoons of butter in a pan over medium heat.
  6. 6. Sauté the onion cubes for about 4 to 5 minutes until translucent.
  7. 7. Remove the onions from the pan and set them aside.
  8. 8. Brown the minced meat in the remaining fat until crumbly.
  9. 9. Season the meat generously with salt and pepper.
  10. 10. Let the meat mixture cool down.
  11. 11. Separate one egg into yolk and white.
  12. 12. Add the yolk, a pinch of salt, and 50 grams of butter to the dough.
  13. 13. Knead the ingredients well into a smooth dough.
  14. 14. Let the dough rise covered in a warm place for another 30 minutes.
  15. 15. Dice the feta cheese into small pieces.
  16. 16. Mix the feta in a bowl with the cooled minced meat, onions, cream, and egg white.
  17. 17. Preheat the oven to 200 degrees Celsius fan mode.
  18. 18. Lightly flour your work surface.
  19. 19. Roll out the dough into a rectangle.
  20. 20. Spread the meat filling evenly over the dough.
  21. 21. Leave a border of about 2 centimeters free.
  22. 22. Roll up the dough starting from the long side.
  23. 23. Cut the roll into pieces about 2 centimeters thick with a sharp knife.
  24. 24. Place the pieces on a baking sheet lined with parchment paper.
  25. 25. Slightly flatten the rolls.
  26. 26. Brush them with cream.
  27. 27. Bake the rolls in the preheated oven at 200 degrees for about 15 minutes.
  28. 28. Serve the yeast rolls warm or cold.
