  1. 1. Rinse the meat under running water and pat it dry with a kitchen towel.
  2. 2. Cut the meat into thin strips.
  3. 3. Halve the onions and remove the outer skin.
  4. 4. Dice one of the onions into small cubes.
  5. 5. Slice the other onion into thick rings.
  6. 6. Peel the garlic and chop it finely.
  7. 7. Wash the tomatoes and cut them into cubes as well.
  8. 8. Wash the cucumber and cut it in half lengthwise.
  9. 9. Remove the seeds from the cucumber.
  10. 10. Grate the cucumber coarsely.
  11. 11. Place the grated cucumber in a bowl and sprinkle it with some salt.
  12. 12. Let the cucumber sit for about 10 minutes to release liquid.
  13. 13. Wash the lemon and cut it in half.
  14. 14. Squeeze the juice from the lemon.
  15. 15. Heat 1 tablespoon of oil in a pot over high heat.
  16. 16. Fry the diced onion and tomatoes for about 2 minutes.
  17. 17. Stir in the tomato paste and roast it for about 1 minute.
  18. 18. Add the rice to the pot and stir it in.
  19. 19. Deglaze everything with about 700 milliliters of salted water.
  20. 20. Simmer the rice covered for about 10 minutes, stirring occasionally.
  21. 21. Heat 2 tablespoons of oil in a frying pan over high heat.
  22. 22. Fry the meat for about 2 minutes.
  23. 23. Season the meat with salt, pepper, paprika, cumin, thyme, and oregano.
  24. 24. Add the onion rings and half of the chopped garlic to the pan.
  25. 25. Drizzle 1 tablespoon of lemon juice over it.
  26. 26. Finish cooking the meat over medium heat for about 5 minutes.
  27. 27. Squeeze the cucumber lightly with your hands to remove the liquid.
  28. 28. Pour off the released juice.
  29. 29. Mix the cucumber in the bowl with Greek yogurt and the remaining garlic.
  30. 30. Season the tzatziki with lemon juice, olive oil, salt, and pepper to taste.
  31. 31. Plate the tzatziki together with the gyros and tomato rice.
  32. 32. Serve the dish and enjoy your meal!
