  1. 1. Thoroughly wash the soup vegetables. Peel them if necessary. Cut the vegetables into large chunks.
  2. 2. Halve the onions. Peel them. Chop the onions finely.
  3. 3. Rinse the beef. Pat it dry with a kitchen towel.
  4. 4. Heat 2 tablespoons of oil in a large pot over high heat.
  5. 5. Sear the meat in batches. This takes about 4 to 5 minutes.
  6. 6. Remove the seared meat from the pot and set it aside.
  7. 7. Add the soup vegetables and the chopped onions to the remaining fat.
  8. 8. Sauté the vegetables for about 3 to 4 minutes.
  9. 9. Return the meat to the pot.
  10. 10. Pour in the red wine and broth.
  11. 11. Season the soup with salt, pepper, paprika powder, and bay leaves.
  12. 12. Let the soup simmer covered for about 90 minutes.
  13. 13. Stir the soup occasionally.
  14. 14. Add more broth if necessary.
  15. 15. Rinse the bell peppers.
  16. 16. Halve the bell peppers.
  17. 17. Remove the stem and seeds.
  18. 18. Dice the bell peppers roughly.
  19. 19. Add the bell peppers to the soup.
  20. 20. Let the bell peppers cook until soft for another approx. 30 minutes.
  21. 21. Bring approx. 2 liters of salted water to a boil in a separate pot.
  22. 22. Add the dumplings to the boiling water.
  23. 23. Let the dumplings simmer on low heat for approx. 10 minutes.
  24. 24. Wash the parsley.
  25. 25. Shake the parsley dry.
  26. 26. Pluck the coarse leaves from the stems.
  27. 27. Chop the parsley roughly.
  28. 28. Season the goulash soup with salt and pepper to taste.
  29. 29. Remove the dumplings from the water.
  30. 30. Let the dumplings drain briefly.
  31. 31. Serve the soup in bowls.
  32. 32. Garnish the soup with the dumplings and parsley.
