🍲 Hearty Goulash Soup with Dumplings

Ingredients
- Soup vegetables 300 g
- Onions, yellow 1 pc.
- Beef goulash 1 kg
- Sunflower oil 4 tbsp
- Red wine, dry 200 ml
- Poultry broth 1.5 L
- Salt pinch
- Pepper, black ground pinch
- Paprika, sweet 1 tsp
- Bay leaves, dried 1 pc.
- Paprika, yellow 1 pc.
- Mini bread dumplings 800 g
- Parsley, fresh 10 g
Instructions
- 1. Thoroughly wash the soup vegetables. Peel them if necessary. Cut the vegetables into large chunks.
- 2. Halve the onions. Peel them. Chop the onions finely.
- 3. Rinse the beef. Pat it dry with a kitchen towel.
- 4. Heat 2 tablespoons of oil in a large pot over high heat.
- 5. Sear the meat in batches. This takes about 4 to 5 minutes.
- 6. Remove the seared meat from the pot and set it aside.
- 7. Add the soup vegetables and the chopped onions to the remaining fat.
- 8. Sauté the vegetables for about 3 to 4 minutes.
- 9. Return the meat to the pot.
- 10. Pour in the red wine and broth.
- 11. Season the soup with salt, pepper, paprika powder, and bay leaves.
- 12. Let the soup simmer covered for about 90 minutes.
- 13. Stir the soup occasionally.
- 14. Add more broth if necessary.
- 15. Rinse the bell peppers.
- 16. Halve the bell peppers.
- 17. Remove the stem and seeds.
- 18. Dice the bell peppers roughly.
- 19. Add the bell peppers to the soup.
- 20. Let the bell peppers cook until soft for another approx. 30 minutes.
- 21. Bring approx. 2 liters of salted water to a boil in a separate pot.
- 22. Add the dumplings to the boiling water.
- 23. Let the dumplings simmer on low heat for approx. 10 minutes.
- 24. Wash the parsley.
- 25. Shake the parsley dry.
- 26. Pluck the coarse leaves from the stems.
- 27. Chop the parsley roughly.
- 28. Season the goulash soup with salt and pepper to taste.
- 29. Remove the dumplings from the water.
- 30. Let the dumplings drain briefly.
- 31. Serve the soup in bowls.
- 32. Garnish the soup with the dumplings and parsley.
