  5. 5. Whisk the ingredients vigorously with a whisk.
  6. 6. Add the sunflower oil drop by drop.
  7. 7. Keep whisking continuously.
  8. 8. Once the mayonnaise thickens, pour in the oil in a thin stream.
  9. 9. Continue whisking until the mayonnaise is creamy.
  10. 10. Add the lemon juice.
  11. 11. Season the mayonnaise with a little sugar.
  12. 12. Adjust the seasoning with salt.
  13. 13. Use the mayonnaise as a dip, for dressings, or as a spread for bread.
  14. 14. Store the mayonnaise in the refrigerator.
