🍽️ Classic Beef Roast with Sauce

Ingredients
- thyme, fresh 10 g
- rosemary, fresh 10 g
- onions, yellow 3 pcs.
- carrots 3 pcs.
- celeriac 0.5 pcs.
- beef roast, from the leg 1 kg
- salt pinch
- oil 4 tbsp
- tomato paste 1 tbsp
- red wine, dry 500 ml
- pepper, black ground pinch
- beef broth 200 ml
- cornstarch 2 tsp
Instructions
- 1. Preheat the oven to 160 degrees Celsius (top and bottom heat).
- 2. Wash the herbs thoroughly and pat them dry with a cloth.
- 3. Halve the onions, peel them, and cut them into coarse cubes.
- 4. Peel the carrots, remove the ends, quarter them lengthwise, and cut them into chunks.
- 5. Peel the celery and cut it into cubes as well.
- 6. Rinse the beef roast, pat it dry with kitchen paper, and salt it generously.
- 7. Heat 2 tablespoons of oil in a pan over high heat.
- 8. Sear the beef roast on all sides for about 2 minutes.
- 9. Place the meat into a baking dish.
- 10. Do not clean the pan; continue using it.
- 11. Heat another 2 tablespoons of oil in the same pan.
- 12. Sauté the onions, carrots, and celery for about 5 minutes.
- 13. Add the tomato paste and cook it for about 2 minutes.
- 14. Deglaze the pan with red wine.
- 15. Stir in the herbs and season the mixture with salt and pepper.
- 16. Bring the sauce to a boil.
- 17. Pour the sauce over the roast in the baking dish.
- 18. Place the baking dish in the oven and roast the beef for about 60 minutes.
- 19. Remove the roast from the oven and wrap it in aluminum foil.
- 20. Let the meat rest for about 10 minutes.
- 21. Pour the contents of the baking dish through a sieve into a pot.
- 22. Bring the liquid in the pot to a boil over medium heat.
- 23. Add broth until you have a total of 500 milliliters.
- 24. Mix the starch smoothly with 2 tablespoons of cold water in a small bowl.
- 25. Add the starch mixture to the sauce and let it simmer for about 2 minutes.
- 26. Finally, adjust the sauce to taste with salt and pepper.
- 27. Remove the beef roast from the foil and slice it.
- 28. Plate the roast with the sauce and serve.
