  1. 1. Preheat the oven to 160 degrees Celsius (top and bottom heat).
  2. 2. Wash the herbs thoroughly and pat them dry with a cloth.
  3. 3. Halve the onions, peel them, and cut them into coarse cubes.
  4. 4. Peel the carrots, remove the ends, quarter them lengthwise, and cut them into chunks.
  5. 5. Peel the celery and cut it into cubes as well.
  6. 6. Rinse the beef roast, pat it dry with kitchen paper, and salt it generously.
  7. 7. Heat 2 tablespoons of oil in a pan over high heat.
  8. 8. Sear the beef roast on all sides for about 2 minutes.
  9. 9. Place the meat into a baking dish.
  10. 10. Do not clean the pan; continue using it.
  11. 11. Heat another 2 tablespoons of oil in the same pan.
  12. 12. Sauté the onions, carrots, and celery for about 5 minutes.
  13. 13. Add the tomato paste and cook it for about 2 minutes.
  14. 14. Deglaze the pan with red wine.
  15. 15. Stir in the herbs and season the mixture with salt and pepper.
  16. 16. Bring the sauce to a boil.
  17. 17. Pour the sauce over the roast in the baking dish.
  18. 18. Place the baking dish in the oven and roast the beef for about 60 minutes.
  19. 19. Remove the roast from the oven and wrap it in aluminum foil.
  20. 20. Let the meat rest for about 10 minutes.
  21. 21. Pour the contents of the baking dish through a sieve into a pot.
  22. 22. Bring the liquid in the pot to a boil over medium heat.
  23. 23. Add broth until you have a total of 500 milliliters.
  24. 24. Mix the starch smoothly with 2 tablespoons of cold water in a small bowl.
  25. 25. Add the starch mixture to the sauce and let it simmer for about 2 minutes.
  26. 26. Finally, adjust the sauce to taste with salt and pepper.
  27. 27. Remove the beef roast from the foil and slice it.
  28. 28. Plate the roast with the sauce and serve.
