  1. 1. Preheat the oven to 220 degrees Celsius using top and bottom heat.
  2. 2. Cut the cold butter into cubes of about 2 centimeters.
  3. 3. Place the butter cubes, flour, one egg, salt, and water into a bowl.
  4. 4. Knead the ingredients by hand until you have a smooth dough.
  5. 5. Roll out the dough on a floured surface to a thickness of about 2 millimeters.
  6. 6. Place the dough into a greased, shallow quiche tin.
  7. 7. Press the dough firmly against the bottom and sides of the tin.
  8. 8. Trim the edges straight with a knife.
  9. 9. Prick the bottom of the dough several times with a fork.
  10. 10. Place the dough in a cool place for a while.
  11. 11. Wash the kale thoroughly under running water.
  12. 12. Remove the thick stems from the kale.
  13. 13. Roughly chop the kale leaves.
  14. 14. Bring about 2 liters of salted water to a boil in a pot.
  15. 15. Add the kale to the boiling water and cook for approx. 5 minutes.
  16. 16. Drain the kale in a colander.
  17. 17. Rinse the kale with cold water to cool it down.
  18. 18. Halve the onions and peel them.
  19. 19. Cut the onions into small cubes.
  20. 20. Wash the apricots.
  21. 21. Halve the apricots and remove the pits.
  22. 22. Cut the apricots into cubes as well.
  23. 23. Slice the sausage into rounds.
  24. 24. Heat the oil in a frying pan over high heat.
  25. 25. Fry the onions and apricots in the pan for approx. 2 minutes.
  26. 26. Season the mixture with salt and pepper.
  27. 27. Remove the onions and apricots from the pan and set them aside.
  28. 28. Reheat the pan.
  29. 29. Fry the sausage slices in the pan for approx. 3 minutes.
  30. 30. Whisk the eggs in a bowl until smooth with the crème fraîche.
  31. 31. Season the egg mixture with salt and pepper to taste.
  32. 32. Mix the kale with the onions, apricots, and sausage pieces.
  33. 33. Distribute the vegetable and sausage mixture evenly over the dough base.
  34. 34. Pour the egg mixture over the filling.
  35. 35. Sprinkle the quiche with Gouda cheese.
  36. 36. Bake the quiche in the preheated oven for about 30 minutes until golden brown.
  37. 37. Serve the quiche warm or cold.
