🍽️ Kale Quiche with Sausage

Ingredients
- butter 125 g
- wheat flour, Type 405 300 g
- eggs 3 pcs
- salt pinch
- water 5 tbsp
- kale, fresh 500 g
- onions, red 1 pcs
- apricots, fresh 5 pcs
- roast bratwursts 2 pcs
- rapeseed oil 2 tbsp
- pepper, black ground pinch
- crème fraîche 200 g
- gouda, grated 150 g
Instructions
- 1. Preheat the oven to 220 degrees Celsius using top and bottom heat.
- 2. Cut the cold butter into cubes of about 2 centimeters.
- 3. Place the butter cubes, flour, one egg, salt, and water into a bowl.
- 4. Knead the ingredients by hand until you have a smooth dough.
- 5. Roll out the dough on a floured surface to a thickness of about 2 millimeters.
- 6. Place the dough into a greased, shallow quiche tin.
- 7. Press the dough firmly against the bottom and sides of the tin.
- 8. Trim the edges straight with a knife.
- 9. Prick the bottom of the dough several times with a fork.
- 10. Place the dough in a cool place for a while.
- 11. Wash the kale thoroughly under running water.
- 12. Remove the thick stems from the kale.
- 13. Roughly chop the kale leaves.
- 14. Bring about 2 liters of salted water to a boil in a pot.
- 15. Add the kale to the boiling water and cook for approx. 5 minutes.
- 16. Drain the kale in a colander.
- 17. Rinse the kale with cold water to cool it down.
- 18. Halve the onions and peel them.
- 19. Cut the onions into small cubes.
- 20. Wash the apricots.
- 21. Halve the apricots and remove the pits.
- 22. Cut the apricots into cubes as well.
- 23. Slice the sausage into rounds.
- 24. Heat the oil in a frying pan over high heat.
- 25. Fry the onions and apricots in the pan for approx. 2 minutes.
- 26. Season the mixture with salt and pepper.
- 27. Remove the onions and apricots from the pan and set them aside.
- 28. Reheat the pan.
- 29. Fry the sausage slices in the pan for approx. 3 minutes.
- 30. Whisk the eggs in a bowl until smooth with the crème fraîche.
- 31. Season the egg mixture with salt and pepper to taste.
- 32. Mix the kale with the onions, apricots, and sausage pieces.
- 33. Distribute the vegetable and sausage mixture evenly over the dough base.
- 34. Pour the egg mixture over the filling.
- 35. Sprinkle the quiche with Gouda cheese.
- 36. Bake the quiche in the preheated oven for about 30 minutes until golden brown.
- 37. Serve the quiche warm or cold.
