🍽️ Kale Casserole with Sausages

Ingredients
- potatoes, mainly waxy 800 g
- salt pinch
- kale, fresh 800 g
- onions, yellow 2 pcs.
- apples, green 2 pcs.
- butter 5 tbsp
- vegetable broth 100 ml
- pepper, black ground pinch
- sour cream 100 g
- nutmeg, ground pinch
- beef sausage 4 pcs.
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into small cubes.
- 3. Place the potato cubes in a pot.
- 4. Cover the potatoes with salted water.
- 5. Bring the water to a boil.
- 6. Cook the potatoes for about 20 minutes until they are soft.
- 7. Meanwhile, heat about 5 liters of salted water in another pot.
- 8. Wash the kale thoroughly.
- 9. Remove thick stems from the kale if necessary.
- 10. Place the kale in the boiling water.
- 11. Blanch the kale for about 3 minutes (cook briefly in boiling water).
- 12. Drain the kale in a sieve.
- 13. Let the kale drain.
- 14. Chop the kale roughly.
- 15. Halve the onions.
- 16. Peel the onions.
- 17. Chop the onions roughly.
- 18. Peel the apples.
- 19. Core the apples.
- 20. Cube the apples.
- 21. Heat 2 tablespoons of butter in a frying pan over medium heat.
- 22. Add the apples and onions to the pan.
- 23. Sauté the apples and onions for about 2 to 3 minutes.
- 24. Add the chopped kale to the pan.
- 25. Add the broth to the pan.
- 26. Season the mixture with salt and pepper.
- 27. Cook the mixture for about 3 to 4 minutes.
- 28. Preheat the oven to 180 °C (top and bottom heat).
- 29. Drain the cooked potatoes.
- 30. Mash the potatoes in the pot with the remaining butter.
- 31. Stir the sour cream into the potatoes.
- 32. Season the mashed potatoes with salt and nutmeg.
- 33. Grease a baking dish.
- 34. Place the kale in the greased baking dish.
- 35. Slice the beef sausages.
- 36. Distribute the sausage slices evenly over the kale.
- 37. Spread the mashed potatoes over the kale and sausages.
- 38. Bake the casserole in the oven for about 40 minutes.
- 39. Carefully remove the casserole from the oven.
- 40. Serve the casserole hot.
