  1. 1. Thoroughly wash the green asparagus.
  2. 2. Peel the bottom third of the asparagus stalks.
  3. 3. Snap off the woody ends of the asparagus stalks.
  4. 4. Wash the lemon under hot water.
  5. 5. Finely grate about 1 teaspoon of lemon zest.
  6. 6. Cut the lemon in half.
  7. 7. Squeeze the juice from the lemon.
  8. 8. Wash the parsley.
  9. 9. Shake the parsley dry.
  10. 10. Pick the parsley leaves off the stems.
  11. 11. Roughly chop the parsley leaves.
  12. 12. Trim the ends of the cress.
  13. 13. Coarsely grate the Parmesan cheese.
  14. 14. Place the lemon zest into a bowl.
  15. 15. Add the chopped parsley to the bowl.
  16. 16. Add the cress to the bowl.
  17. 17. Add the grated Parmesan to the bowl.
  18. 18. Add 1 tablespoon of lemon juice to the bowl.
  19. 19. Add 1 tablespoon of olive oil to the bowl.
  20. 20. Mix all ingredients in the bowl thoroughly.

  23. 23. Heat 2 tablespoons of olive oil in a pan over high heat.
  24. 24. Fry the asparagus in it for approx. 4 minutes.

  27. 27. Bring approx. 2 liters of salted water to a boil in a pot.
  28. 28. Add 1 tablespoon of vinegar to the boiling water.

  37. 37. Arrange the fried asparagus on a plate or serving platter.
  38. 38. Place Parma ham on the asparagus.
  39. 39. Distribute the herb topping over the fried asparagus.
  40. 40. Serve the dish with the poached egg.
