🍳 Green Asparagus with Poached Egg and Parma Ham

Ingredients
- green asparagus 2 bunch
- organic lemons 1 pc
- parsley, fresh 20 g
- cress bed 1 pc
- parmesan 30 g
- olive oil 3 tbsp
- salt pinch
- pepper, black ground pinch
- vinegar 1 tbsp
- eggs 4 pc
- parma ham 100 g
Instructions
- 1. Thoroughly wash the green asparagus.
- 2. Peel the bottom third of the asparagus stalks.
- 3. Snap off the woody ends of the asparagus stalks.
- 4. Wash the lemon under hot water.
- 5. Finely grate about 1 teaspoon of lemon zest.
- 6. Cut the lemon in half.
- 7. Squeeze the juice from the lemon.
- 8. Wash the parsley.
- 9. Shake the parsley dry.
- 10. Pick the parsley leaves off the stems.
- 11. Roughly chop the parsley leaves.
- 12. Trim the ends of the cress.
- 13. Coarsely grate the Parmesan cheese.
- 14. Place the lemon zest into a bowl.
- 15. Add the chopped parsley to the bowl.
- 16. Add the cress to the bowl.
- 17. Add the grated Parmesan to the bowl.
- 18. Add 1 tablespoon of lemon juice to the bowl.
- 19. Add 1 tablespoon of olive oil to the bowl.
- 20. Mix all ingredients in the bowl thoroughly.
- 21. Season the mixture with salt.
- 22. Season the mixture with pepper.
- 23. Heat 2 tablespoons of olive oil in a pan over high heat.
- 24. Fry the asparagus in it for approx. 4 minutes.
- 25. Season the asparagus with salt.
- 26. Season the asparagus with pepper.
- 27. Bring approx. 2 liters of salted water to a boil in a pot.
- 28. Add 1 tablespoon of vinegar to the boiling water.
- 29. Reduce the heat.
- 30. The water should only simmer gently.
- 31. Crack an egg into a cup.
- 32. Make sure the yolk remains intact.
- 33. Stir the water in the pot with a whisk to create a whirlpool.
- 34. Carefully let the eggs slide into the whirlpool one by one.
- 35. Let the eggs cook on low heat for approx. 4–5 minutes.
- 36. Carefully remove the eggs with a slotted spoon.
- 37. Arrange the fried asparagus on a plate or serving platter.
- 38. Place Parma ham on the asparagus.
- 39. Distribute the herb topping over the fried asparagus.
- 40. Serve the dish with the poached egg.
