🍽️ Oven Green Asparagus with Poached Egg

Ingredients
- green asparagus 2 bunch
- Black Forest ham 100 g
- olive oil 2 tbsp
- salt pinch
- pepper, black ground pinch
- Parmesan, grated 4 tbsp
- parsley, fresh 20 g
- vinegar 2 tsp
- eggs 4 pcs
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Thoroughly wash the green asparagus.
- 3. Peel the bottom third of the asparagus stalks.
- 4. Snap off the woody ends of the asparagus stalks.
- 5. Break the ham into small pieces.
- 6. Place the asparagus in a baking dish.
- 7. Drizzle olive oil over the asparagus.
- 8. Season the asparagus with salt and pepper.
- 9. Sprinkle the ham and Parmesan cheese over the top.
- 10. Roast everything in the oven for about 10 minutes.
- 11. Wash the parsley and shake it dry.
- 12. Pluck the parsley leaves from the stems.
- 13. Finely chop the parsley leaves.
- 14. Fill a large pot with water.
- 15. Add salt and vinegar to the water.
- 16. Bring the water to a boil.
- 17. Reduce the heat so the water is only simmering gently.
- 18. Crack the eggs one by one.
- 19. Gently slide the eggs into the water.
- 20. Cook the eggs for about 2 to 3 minutes.
- 21. Remove the eggs from the water with a slotted spoon.
- 22. Take the asparagus out of the oven.
- 23. Sprinkle the chopped parsley over the asparagus.
- 24. Serve the asparagus together with the poached egg.
