  1. 1. Preheat the oven to 200 degrees Celsius with fan.
  2. 2. Thoroughly wash the green asparagus.
  3. 3. Peel the bottom third of the asparagus stalks.
  4. 4. Snap off the woody ends of the asparagus stalks.
  5. 5. Break the ham into small pieces.
  6. 6. Place the asparagus in a baking dish.
  7. 7. Drizzle olive oil over the asparagus.
  8. 8. Season the asparagus with salt and pepper.
  9. 9. Sprinkle the ham and Parmesan cheese over the top.
  10. 10. Roast everything in the oven for about 10 minutes.
  11. 11. Wash the parsley and shake it dry.
  12. 12. Pluck the parsley leaves from the stems.
  13. 13. Finely chop the parsley leaves.
  14. 14. Fill a large pot with water.
  15. 15. Add salt and vinegar to the water.
  16. 16. Bring the water to a boil.
  17. 17. Reduce the heat so the water is only simmering gently.
  18. 18. Crack the eggs one by one.
  19. 19. Gently slide the eggs into the water.
  20. 20. Cook the eggs for about 2 to 3 minutes.
  21. 21. Remove the eggs from the water with a slotted spoon.
  22. 22. Take the asparagus out of the oven.
  23. 23. Sprinkle the chopped parsley over the asparagus.
  24. 24. Serve the asparagus together with the poached egg.
