  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Separate the eggs by dividing the yolks from the whites.
  3. 3. Whip the egg whites in a bowl using a hand mixer and a whisk until stiff.
  4. 4. Slowly stir in 75 grams of sugar into the egg whites.
  5. 5. Continue mixing until the egg whites are creamy and shiny.
  6. 6. In a separate bowl, beat the egg yolks with the remaining sugar and a pinch of salt for about 5 minutes until creamy.
  7. 7. Mix flour, starch, and baking powder in a separate bowl.
  8. 8. Sift the flour mixture over the egg yolk mixture.
  9. 9. Gently fold half of the egg whites into the mixture.
  10. 10. Briefly fold in the remaining egg whites.
  11. 11. Pour the batter into a greased springform pan.
  12. 12. Bake the cake in the oven for approx. 25 minutes until golden yellow.
  13. 13. Allow the cake base to cool completely afterwards.
  14. 14. Cut the cooled base into three equal parts.
  15. 15. Wash the lemon thoroughly.
  16. 16. Grate about 1 teaspoon of the zest finely.
  17. 17. Beat the cream cheese in a bowl with a hand mixer until frothy.
  18. 18. Add powdered sugar, food coloring, and the lemon zest gradually.
  19. 19. Spread one quarter of the cream over the first cake layer.
  20. 20. Place the second cake layer on top.
  21. 21. Spread another quarter of the cream over this second layer.
  22. 22. Place the third and final cake layer on top.
  23. 23. Cover the entire cake with the remaining cream.
  24. 24. Decorate the green cake for pcs Patrick's Day with green chocolate lentils or sugar sprinkles.
