🍰 Green pcs Patrick's Day Cake

Ingredients
- Eggs 3 pcs.
- Sugar 75 g
- Salt pinch
- Wheat flour, Type 405 75 g
- Cornstarch 50 g
- Baking powder 1 tsp
- Lemons 1 pcs.
- Cream cheese, plain 400 g
- Icing sugar 50 g
- Food coloring, green 2 tsp
- Chocolate lentils 4 tbsp
- Sugar pearls 4 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Separate the eggs by dividing the yolks from the whites.
- 3. Whip the egg whites in a bowl using a hand mixer and a whisk until stiff.
- 4. Slowly stir in 75 grams of sugar into the egg whites.
- 5. Continue mixing until the egg whites are creamy and shiny.
- 6. In a separate bowl, beat the egg yolks with the remaining sugar and a pinch of salt for about 5 minutes until creamy.
- 7. Mix flour, starch, and baking powder in a separate bowl.
- 8. Sift the flour mixture over the egg yolk mixture.
- 9. Gently fold half of the egg whites into the mixture.
- 10. Briefly fold in the remaining egg whites.
- 11. Pour the batter into a greased springform pan.
- 12. Bake the cake in the oven for approx. 25 minutes until golden yellow.
- 13. Allow the cake base to cool completely afterwards.
- 14. Cut the cooled base into three equal parts.
- 15. Wash the lemon thoroughly.
- 16. Grate about 1 teaspoon of the zest finely.
- 17. Beat the cream cheese in a bowl with a hand mixer until frothy.
- 18. Add powdered sugar, food coloring, and the lemon zest gradually.
- 19. Spread one quarter of the cream over the first cake layer.
- 20. Place the second cake layer on top.
- 21. Spread another quarter of the cream over this second layer.
- 22. Place the third and final cake layer on top.
- 23. Cover the entire cake with the remaining cream.
- 24. Decorate the green cake for pcs Patrick's Day with green chocolate lentils or sugar sprinkles.
- 25. Serve the cake and enjoy!
