🍰 Green Jelly with Vanilla Cream

Ingredients
- leaf gelatin 12 g
- apple juice 450 ml
- organic limes 1 pc.
- honey 50 g
- food coloring, green 0.25 tsp
- grapes, light 200 g
- vanilla pod 1 pc.
- milk 350 ml
- brown sugar 30 g
- cornstarch 1 tsp
Instructions
- 1. Soak the gelatin in a bowl with cold water.
- 2. Mix the apple juice, lime juice, and honey in a second bowl.
- 3. Add green food coloring to the juice mixture if desired.
- 4. Thoroughly wash the grapes.
- 5. Remove the stems from the grapes.
- 6. Divide the grapes evenly among four glasses.
- 7. Gently squeeze the soaked gelatin.
- 8. Melt the gelatin in a pot over low heat for about one minute while stirring.
- 9. Add a portion of the apple juice mixture to the melted gelatin and stir.
- 10. Stir the gelatin-juice mixture into the remaining juice.
- 11. Distribute the liquid over the glasses with the grapes.
- 12. Let the jelly mixture set in the refrigerator for at least four hours.
- 13. Slice the vanilla pod lengthwise.
- 14. Scrape the vanilla seeds out of the pod.
- 15. Heat 300 milliliters of milk, the vanilla seeds, the pod, and sugar in a pot over medium heat.
- 16. Bring the milk mixture to a boil.
- 17. Remove the pot from the heat.
- 18. Let the mixture steep covered for about 15 minutes.
- 19. Remove the vanilla pod from the milk.
- 20. Bring the milk to a boil again.
- 21. Whisk the starch into the remaining cold milk in a separate bowl.
- 22. Add the starch-milk mixture to the hot vanilla milk.
- 23. Simmer the vanilla sauce for about two minutes.
- 24. Let the vanilla sauce cool down.
- 25. Serve the green jelly with the vanilla sauce.
