🍲 Creamy Pea Soup with Crispy Croutons and Feta

Ingredients
- onions, yellow 1 pc.
- lemons 1 pc.
- oil 4 tbsp.
- peas, frozen 500 g
- vegetable broth 700 g
- salt pinch
- baguette 0.5 pc.
- butter 2 tbsp.
- basil, fresh 10 g
- pepper, black ground pinch
- feta 100 g
Instructions
- 1. Cut the onion in half and peel off the outer skin.
- 2. Wash the lemon thoroughly.
- 3. Finely grate about one teaspoon of the lemon zest.
- 4. Squeeze the juice from the lemon.
- 5. Place the onion pieces into the mixing container.
- 6. Chop the onion for 4 seconds on speed 5.
- 7. Push the onion pieces down with a spatula.
- 8. Add 2 tablespoons of oil.
- 9. Sauté the onions for 2 minutes at 120 degrees Celsius on speed 1.
- 10. Add the peas to the soup.
- 11. Add the vegetable broth.
- 12. Add the grated lemon zest.
- 13. Add some salt.
- 14. Cook the mixture for 15 minutes at 100 degrees Celsius on speed 1.
- 15. Cut the bread into cubes of about 1 to 2 centimeters in size.
- 16. Heat 2 tablespoons of butter and 2 tablespoons of oil in a pan on medium heat.
- 17. Fry the bread cubes for about 5 minutes until crispy on all sides.
- 18. Season the croutons with salt.
- 19. Place the croutons on a plate with kitchen paper to cool down.
- 20. Wash the basil.
- 21. Shake the basil dry.
- 22. Pluck the leaves off the stems.
- 23. Puree the soup gradually from speed 7 to 10 over 60 seconds.
- 24. Season the soup with salt.
- 25. Season the soup with pepper.
- 26. Add the lemon juice.
- 27. Crumble the feta cheese roughly with your hands.
- 28. Fill the pea soup into deep plates.
- 29. Garnish the soup with feta, croutons, and basil.
- 30. Serve the soup and enjoy!
