🍽️ Meat Skewers with Fresh Kiwi Salsa

Ingredients
- pork shoulder cutlets 600 g
- garlic cloves 1 pc.
- mint, fresh 30 g
- oil 5 tbsp
- salt pinch
- pepper, black ground pinch
- kiwi 3 pc.
- pepper, yellow 1 pc.
- shallots 2 pc.
- organic limes 1 pc.
- baguette 1 pc.
Instructions
- 1. Rinse the meat under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut the meat into strips about 2 centimeters thick.
- 4. Thread the meat strips onto the wooden skewers in a spiral shape.
- 5. Peel the garlic and dice it finely.
- 6. Wash the mint and dry the leaves.
- 7. Pick the mint leaves off the stems and chop them finely.
- 8. Mix 4 tablespoons of oil with the garlic, half of the mint, salt, and pepper in a bowl.
- 9. Rub the meat with this oil mixture.
- 10. Place the marinated skewers in the refrigerator for a while.
- 11. Peel the kiwis and dice them finely.
- 12. Wash the bell pepper and cut it into quarters.
- 13. Remove the stem and seeds from the bell pepper.
- 14. Dice the deseeded bell pepper as well.
- 15. Halve the shallots and peel them.
- 16. Finely chop the shallots.
- 17. Wash the lime and cut it in half.
- 18. Squeeze the juice from the lime.
- 19. Add the kiwi pieces, bell pepper, and shallots to a bowl.
- 20. Add the remaining chopped mint.
- 21. Season the mixture with salt and the lime juice.
- 22. Heat 1 tablespoon of oil in a pan over high heat.
- 23. Fry the meat skewers for about 6 minutes until golden brown.
- 24. Remove the pan from the heat.
- 25. Let the skewers rest covered for approx. 4 minutes.
- 26. Plate the skewers.
- 27. Serve the skewers with the kiwi salsa and baguette.
