🍽️ Cod and Pineapple Skewers from the Grill

Ingredients
- Shallots 4 pcs.
- Pineapple 1 pc.
- Pepper, red 2 pcs.
- Cod back fillet 500 g
- Organic Limes 1 pc.
- Oil 3 tbsp
- Honey 1 tsp
- Chili, ground pinch
- Pepper, black ground pinch
Instructions
- 1. Place the wooden skewers in a bowl of cold water and let them soak.
- 2. Peel the shallots and cut them into quarters lengthwise.
- 3. Peel the pineapple, remove the hard core, and cut the flesh into cubes.
- 4. Wash the peppers thoroughly, halve them, remove the core and seeds, and cut them into approx. 2 cm cubes.
- 5. Rinse the cod, pat it dry with a kitchen towel, and cut it into approx. 2 cm pieces.
- 6. Wash the lime, halve it, and squeeze out the juice.
- 7. In a bowl, mix the oil, 1 tbsp lime juice, honey, chili, and pepper well.
- 8. Add the cod, peppers, pineapple, and shallots to the marinade and mix everything well.
- 9. Thread the marinated ingredients onto the prepared wooden skewers as desired.
- 10. Grill the skewers over hot coals for approx. 8 minutes.
- 11. Carefully turn the skewers until the peppers look slightly charred.
- 12. Arrange the skewers on plates and serve.
