  1. 1. Wash the tomatoes thoroughly.
  2. 2. Remove the hard stem from the top of the tomatoes.
  3. 3. Slice the tomatoes into even rounds.
  4. 4. Wash the parsley and the basil.
  5. 5. Shake the herbs dry to remove excess water.
  6. 6. Roughly chop the parsley and the basil.
  7. 7. Slice the goat cheese (Hirtengenuss) into rounds.
  8. 8. Preheat a frying pan over medium heat.
  9. 9. Spread one teaspoon of pesto on each of four slices of bread.
  10. 10. Place the tomato slices on the pesto-covered bread.
  11. 11. Distribute the cheese slices over the tomatoes.
  12. 12. Sprinkle the chopped herbs over the cheese.
  13. 13. Season the filling with a pinch of salt.
  14. 14. Add freshly ground pepper.
  15. 15. Sprinkle some Herbs de Provence over it.
  16. 16. Spread the remaining bread slices with one teaspoon of pesto each.
  17. 17. Top the filled slices with the pesto-spread breads to close the sandwiches.
  18. 18. Melt some margarine in the preheated pan.
  19. 19. Place the sandwiches into the hot pan.
  20. 20. Fry the sandwiches for about three minutes until golden brown.
  21. 21. Carefully turn the sandwiches over.
  22. 22. Fry the other side for another three minutes until golden brown.
  23. 23. Cut the finished sandwiches diagonally in half.
  24. 24. Serve the sandwiches immediately while still warm.
