🍽️ Grilled Sandwich with Goat Cheese, Tomatoes and Herbs

Ingredients
- Vine tomatoes 2 pcs.
- Parsley, fresh 15 g
- Basil, fresh 15 g
- Vegan shepherd's delight 150 g
- Farmhouse mild bread 8 slices
- Vegan Basilico pesto 8 tsp
- Salt pinch
- Pepper, black ground pinch
- Herbs of Provence, dried pinch
- Margarine, vegan 8 tsp
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Remove the hard stem from the top of the tomatoes.
- 3. Slice the tomatoes into even rounds.
- 4. Wash the parsley and the basil.
- 5. Shake the herbs dry to remove excess water.
- 6. Roughly chop the parsley and the basil.
- 7. Slice the goat cheese (Hirtengenuss) into rounds.
- 8. Preheat a frying pan over medium heat.
- 9. Spread one teaspoon of pesto on each of four slices of bread.
- 10. Place the tomato slices on the pesto-covered bread.
- 11. Distribute the cheese slices over the tomatoes.
- 12. Sprinkle the chopped herbs over the cheese.
- 13. Season the filling with a pinch of salt.
- 14. Add freshly ground pepper.
- 15. Sprinkle some Herbs de Provence over it.
- 16. Spread the remaining bread slices with one teaspoon of pesto each.
- 17. Top the filled slices with the pesto-spread breads to close the sandwiches.
- 18. Melt some margarine in the preheated pan.
- 19. Place the sandwiches into the hot pan.
- 20. Fry the sandwiches for about three minutes until golden brown.
- 21. Carefully turn the sandwiches over.
- 22. Fry the other side for another three minutes until golden brown.
- 23. Cut the finished sandwiches diagonally in half.
- 24. Serve the sandwiches immediately while still warm.
