🍰 Greek Passion Fruit Coconut Emek

Ingredients
- water 1 L
- sugar 150 g
- twice-baked bread 32 pcs.
- cinnamon 3 tbsp
- almond drink 1 L
- vanilla pudding powder 2 packets
- passion fruit-peach-coconut dessert 400 g
- San-apart 125 g
Instructions
- 1. Put 1 liter of water and 100 grams of sugar into a pot.
- 2. Bring the mixture to a boil.
- 3. Let the syrup reduce on medium heat for about 10 minutes.
- 4. Line a large baking dish with two layers of sponge fingers.
- 5. Sprinkle 2 tablespoons of cinnamon over the sponge fingers.
- 6. Pour the warm syrup evenly over the sponge fingers.
- 7. Mix 12 tablespoons of almond drink, 5 tablespoons of sugar, and vanilla pudding powder in a bowl.
- 8. Bring the remaining almond drink to a boil in a pot.
- 9. Stir the mixed pudding powder into the boiling almond drink.
- 10. Let the pudding mixture cook for about 1 minute while stirring constantly.
- 11. Reduce the heat to low and let the pudding simmer for about 4 minutes.
- 12. Continue cooking the pudding until it becomes thick.
- 13. Pour the hot pudding directly over the sponge fingers.
- 14. Let the dessert cool down for about 30 minutes.
- 15. Whip the coconut dessert mix and San-apart (a gelatin mixture) with a hand mixer and whisk for about 4 minutes until foamy.
- 16. Spread the coconut cream evenly over the cooled pudding layer.
- 17. Place the dessert in the refrigerator for about 2 hours.
- 18. Sprinkle the finished Emek with cinnamon before serving.
- 19. Garnish the dessert with almond sticks if desired.
