  1. 1. Mix flour, one egg, a pinch of salt, water, and oil in a bowl until a homogeneous mass forms.
  2. 2. Knead the dough for about ten minutes until it is smooth and elastic.
  3. 3. Lightly coat the dough with oil.
  4. 4. Cover the dough and let it rest for thirty minutes.
  5. 5. Toast the pine nuts in a dry pan until they are golden brown.
  6. 6. Remove the pine nuts from the pan and set them aside.
  7. 7. Add the spinach to the hot pan and cook it until all the liquid has evaporated.
  8. 8. Let the cooked spinach cool down briefly.
  9. 9. Finely chop the spring onions, parsley, dill, and mint.
  10. 10. Add the cooled spinach, chopped herbs, yogurt, and three eggs to a large bowl.
  11. 11. Crumble the feta cheese with your hands directly into the bowl.
  12. 12. Season the filling to taste with your preferred spices.
  13. 13. Divide the dough into four equal pieces.
  14. 14. Shape each piece of dough into a ball.
  15. 15. Lightly coat the dough balls with sunflower oil.
  16. 16. Roll one dough ball on a silicone mat as thinly as possible.
  17. 17. Stretch the dough carefully with your fingertips and over the back of your hand until it is paper-thin.
  18. 18. Alternatively, use a cotton or linen cloth if you do not have a silicone mat.
  19. 19. Ensure the dough is thin enough to read through it.
  20. 20. Preheat the oven to 200 degrees Celsius (top and bottom heat).
  21. 21. Grease a baking dish, such as an enamel dish, with sunflower oil.
  22. 22. Slice one spring onion into thin rings.
  23. 23. Sprinkle the spring onion rings over the finished dish.
  24. 24. Serve the spanakopita warm or cold.
