  1. 1. Rinse the quinoa in a sieve under lukewarm water.
  2. 2. Bring about 700 milliliters of salted water to a boil in a pot.
  3. 3. Add the quinoa to the boiling water.
  4. 4. Cook the quinoa on low heat with the lid on for about 12 minutes.
  5. 5. Remove the pot from the heat and let the quinoa steam for another 5 minutes.
  6. 6. Mix the cooked quinoa with 1 tablespoon of olive oil.
  7. 7. Cut the lime in half and squeeze out the juice.
  8. 8. Wash the cilantro and shake it dry.
  9. 9. Pluck the cilantro leaves from the stems and set aside 1 tablespoon.
  10. 10. Cut the avocados in half and remove the pits.
  11. 11. Scoop the avocado flesh out of the skin with a spoon.
  12. 12. Place the avocado flesh, the remaining cilantro, and the lime juice into a tall container.
  13. 13. Blend the mixture finely with an immersion blender.
  14. 14. Season the avocado cream with salt and pepper.
  15. 15. Clean the mushrooms with kitchen paper if necessary and quarter them.
  16. 16. Halve the onion, peel it, and dice it.
  17. 17. Heat 1 tablespoon of olive oil in a frying pan on high heat.
  18. 18. Fry the mushrooms and onions for about 4 minutes.
  19. 19. Season the mushroom mixture with salt and pepper.
  20. 20. Bring about 1 liter of salted water to a boil in a pot.
  21. 21. Wash the asparagus and peel the lower third.
  22. 22. Remove the woody ends of the asparagus.
  23. 23. Slice the asparagus into thin rounds.
  24. 24. Add the peas and asparagus to the boiling water for about 3 minutes.
  25. 25. Drain the vegetables in a sieve.
  26. 26. Shock the vegetables with cold water.
  27. 27. Distribute the quinoa evenly onto 4 bowls.
  28. 28. Garnish the bowls with avocado cream, mushrooms, onions, peas, asparagus, fresh cilantro, and sesame seeds.
