🍽️ Fresh Quinoa Bowl with Green Asparagus

Ingredients
- quinoa 300 g
- Salt Pinch
- Olive oil 2 tbsp
- Organic Limes 1 pc
- Cilantro, fresh 15 g
- Avocado 2 pcs
- Pepper, black ground Pinch
- Mushrooms, white 250 g
- Onions, yellow 1 pc
- Green asparagus 1 bunch
- Peas, frozen 200 g
- Sesame, white 2 tbsp
Instructions
- 1. Rinse the quinoa in a sieve under lukewarm water.
- 2. Bring about 700 milliliters of salted water to a boil in a pot.
- 3. Add the quinoa to the boiling water.
- 4. Cook the quinoa on low heat with the lid on for about 12 minutes.
- 5. Remove the pot from the heat and let the quinoa steam for another 5 minutes.
- 6. Mix the cooked quinoa with 1 tablespoon of olive oil.
- 7. Cut the lime in half and squeeze out the juice.
- 8. Wash the cilantro and shake it dry.
- 9. Pluck the cilantro leaves from the stems and set aside 1 tablespoon.
- 10. Cut the avocados in half and remove the pits.
- 11. Scoop the avocado flesh out of the skin with a spoon.
- 12. Place the avocado flesh, the remaining cilantro, and the lime juice into a tall container.
- 13. Blend the mixture finely with an immersion blender.
- 14. Season the avocado cream with salt and pepper.
- 15. Clean the mushrooms with kitchen paper if necessary and quarter them.
- 16. Halve the onion, peel it, and dice it.
- 17. Heat 1 tablespoon of olive oil in a frying pan on high heat.
- 18. Fry the mushrooms and onions for about 4 minutes.
- 19. Season the mushroom mixture with salt and pepper.
- 20. Bring about 1 liter of salted water to a boil in a pot.
- 21. Wash the asparagus and peel the lower third.
- 22. Remove the woody ends of the asparagus.
- 23. Slice the asparagus into thin rounds.
- 24. Add the peas and asparagus to the boiling water for about 3 minutes.
- 25. Drain the vegetables in a sieve.
- 26. Shock the vegetables with cold water.
- 27. Distribute the quinoa evenly onto 4 bowls.
- 28. Garnish the bowls with avocado cream, mushrooms, onions, peas, asparagus, fresh cilantro, and sesame seeds.
- 29. Serve the bowls and enjoy your meal!
