🍰 Grapefruit and Lemon Soufflé

Ingredients
- eggs 4 pcs
- grapefruit 1 pcs
- lemons 2 pcs
- butter 1 tbsp
- powdered sugar 180 g
- milk 100 ml
- wheat flour, type 405 50 g
- salt pinch
Instructions
- 1. Preheat the oven to 180 degrees Celsius using top and bottom heat.
- 2. Separate the eggs. Place the yolks and whites in two separate bowls.
- 3. Wash the grapefruit thoroughly.
- 4. Cut the grapefruit in half.
- 5. Squeeze the juice out of the grapefruit.
- 6. Wash the lemon thoroughly.
- 7. Finely grate about one teaspoon of the lemon zest.
- 8. Cut the lemon in half.
- 9. Squeeze the juice out of the lemon.
- 10. Add butter and 175 grams of powdered sugar to a large bowl.
- 11. Beat the butter and sugar with a hand mixer and whisk until fluffy.
- 12. Add the egg yolks to the butter-sugar mixture.
- 13. Stir the egg yolks in well.
- 14. Add the lemon juice to the yolk mixture.
- 15. Add the grapefruit juice to the yolk mixture.
- 16. Add milk to the yolk mixture.
- 17. Add flour to the yolk mixture.
- 18. Mix all ingredients in the yolk mixture thoroughly.
- 19. Take a second, clean bowl.
- 20. Add the egg whites to the second bowl.
- 21. Add a pinch of salt to the egg whites.
- 22. Whip the egg whites until stiff.
- 23. Gently fold the whipped egg whites into the batter.
- 24. Pour the mixture into a baking dish.
- 25. Bake the soufflé for about 40 minutes in the oven.
- 26. Carefully remove the soufflé from the oven.
- 27. Dust the soufflé with powdered sugar.
- 28. Serve the soufflé immediately.
