  1. 1. Preheat the oven to 180 degrees Celsius using top and bottom heat.
  2. 2. Separate the eggs. Place the yolks and whites in two separate bowls.
  3. 3. Wash the grapefruit thoroughly.
  4. 4. Cut the grapefruit in half.
  5. 5. Squeeze the juice out of the grapefruit.
  6. 6. Wash the lemon thoroughly.
  7. 7. Finely grate about one teaspoon of the lemon zest.
  8. 8. Cut the lemon in half.
  9. 9. Squeeze the juice out of the lemon.
  10. 10. Add butter and 175 grams of powdered sugar to a large bowl.
  11. 11. Beat the butter and sugar with a hand mixer and whisk until fluffy.
  12. 12. Add the egg yolks to the butter-sugar mixture.
  13. 13. Stir the egg yolks in well.
  14. 14. Add the lemon juice to the yolk mixture.
  15. 15. Add the grapefruit juice to the yolk mixture.
  16. 16. Add milk to the yolk mixture.
  17. 17. Add flour to the yolk mixture.
  18. 18. Mix all ingredients in the yolk mixture thoroughly.
  19. 19. Take a second, clean bowl.
  20. 20. Add the egg whites to the second bowl.
  21. 21. Add a pinch of salt to the egg whites.
  22. 22. Whip the egg whites until stiff.
  23. 23. Gently fold the whipped egg whites into the batter.
  24. 24. Pour the mixture into a baking dish.
  25. 25. Bake the soufflé for about 40 minutes in the oven.
  26. 26. Carefully remove the soufflé from the oven.
  27. 27. Dust the soufflé with powdered sugar.
  28. 28. Serve the soufflé immediately.
