  1. 1. Wash the ginger thoroughly and slice it thinly. Halve the lemon and grapefruit and squeeze out the juice. Rinse the rosemary and let it drain.
  2. 2. In a saucepan, bring the ginger slices together with sugar and water to a simmer over medium heat until the sugar is completely dissolved. Remove the ginger from the syrup and let it cool.
  3. 3. Fill a cocktail shaker with ice. Add gin, 1 tbsp of the sugar syrup, 2 tbsp of grapefruit juice, and 1 tsp of lemon juice to the shaker and shake vigorously.
  4. 4. Fill a cocktail glass with ice and strain the grapefruit-ginger gin into the glass. Top up with mineral water and serve garnished with a sprig of rosemary. Cheers! Tip: Store the leftover sugar syrup in a bottle.
