  2. 2. Place the coconut oil, honey, cinnamon, and vanilla sugar in a saucepan.
  3. 3. Warm the mixture over medium heat.
  4. 4. Stir continuously until everything has melted and combined.
  5. 5. This should take about three minutes.
  6. 6. Roughly chop the seeds and nuts.
  7. 7. Add the chopped seeds and nuts to a large bowl.
  8. 8. Add the oat flakes.
  9. 9. Pour the warm oil and honey mixture over the dry ingredients.
  10. 10. Mix everything well until all ingredients are coated.
  11. 11. Line a baking tray with baking paper.
  12. 12. Spread the granola mixture evenly on the tray.
  13. 13. Place the tray in the preheated oven.
  14. 14. Bake the granola for ten minutes.
  15. 15. Take the tray out of the oven briefly.
  16. 16. Turn the mixture so it browns evenly.
  17. 17. Bake for another six minutes.
  18. 18. Watch closely as it can burn quickly.
  19. 19. Remove the granola from the oven when it is golden brown.
  20. 20. Mix the dried cranberries into the hot granola.
  21. 21. Let the granola cool down completely.
