  1. 1. Preheat the oven to 200 °C (top/bottom heat). In a pot over medium heat, bring butter, salt, and 200 ml water to a boil. Add the flour while stirring constantly until a firm dough forms. Transfer the choux pastry to a bowl and let it cool for about 10 minutes.
  2. 2. Grate both cheeses finely. Mix the eggs into the cooled dough, stir in the cheese, and season with salt and pepper.
  3. 3. Using two teaspoons, place dough portions about 4 cm in size with 2 cm spacing onto a baking sheet lined with parchment paper. Bake the gougères for about 20 minutes until golden brown, and serve warm. Enjoy your meal!
