  1. 1. Mix flour, salt, water, and 2 tablespoons of olive oil in a bowl.
  2. 2. Knead the dough for about 5 minutes until it is smooth and elastic.
  3. 3. Cover the dough and let it rest at room temperature for 30 minutes.
  4. 4. Halve and peel the onions. Dice them finely.
  5. 5. Peel the garlic and chop it finely.
  6. 6. Wash the spinach and let it drain well.
  7. 7. Crumble the feta cheese into coarse pieces using your hands.
  8. 8. Heat 2 tablespoons of olive oil in a pan over medium heat.
  9. 9. Sauté the onions and garlic for 2 to 3 minutes until translucent.
  10. 10. Add the spinach to the pan and let it wilt for 3 minutes.
  11. 11. Remove the pan from the heat.
  12. 12. Fold the feta into the spinach mixture.
  13. 13. Season the filling with salt and pepper to taste.
  14. 14. Divide the dough into 8 equal portions.
  15. 15. Dust a work surface with flour.
  16. 16. Roll each dough portion into a thin circle.
  17. 17. Spread the filling over half of a dough circle.
  18. 18. Fold the empty part of the dough over the filling.
  19. 19. Press the edges firmly together to create a half-moon shape.
  20. 20. Place the raw gözleme individually on a floured cutting board.
  21. 21. Preheat the grill.
  22. 22. Grill the gözleme for 2 to 3 minutes on each side until golden brown.
  23. 23. Place the finished gözleme on a plate.
  24. 24. Keep them warm covered.
  25. 25. Brush the gözleme with a little butter.
  26. 26. Serve the gözleme immediately.
