🍽️ Gnocchi with Mediterranean Vegetables

Ingredients
- onions, yellow 1 pc.
- garlic cloves 1 pc.
- zucchini 300 g
- eggplants 300 g
- peppers, yellow 150 g
- cherry tomatoes 400 g
- vegan gnocchi 600 g
- water 200 ml
- olives, black 80 g
- salt pinch
- pepper, black ground pinch
- Italian herbs, dried 1 tsp
- basil, fresh 10 g
- vegan shepherd's delight 150 g
Instructions
- 1. Halve the onion and peel it.
- 2. Peel the garlic.
- 3. Wash the zucchini and the eggplants.
- 4. Remove the ends from the zucchini and eggplants.
- 5. Cut the zucchini and eggplants into 1 cm cubes.
- 6. Wash the bell peppers.
- 7. Remove the core from the bell peppers.
- 8. Cut the bell peppers into cubes.
- 9. Wash the cherry tomatoes.
- 10. Halve the cherry tomatoes.
- 11. Place the gnocchi in the deep steam cooking insert.
- 12. Put the onion and garlic into the mixing container.
- 13. Chop the onion and garlic for 4 seconds at speed 8.
- 14. Add the oil.
- 15. Sauté the mixture for 4 minutes on the sauté setting.
- 16. Add the halved cherry tomatoes.
- 17. Chop the tomatoes for 6 seconds at speed 8.
- 18. Add the zucchini, eggplants, and bell peppers.
- 19. Add the olives.
- 20. Add the water.
- 21. Add 0.5 teaspoons of salt.
- 22. Add a pinch of pepper.
- 23. Add the Italian herbs.
- 24. Place the steam cooking insert on top.
- 25. Close the pot.
- 26. Steam the vegetables for 20 minutes.
- 27. Wash the basil in the meantime.
- 28. Shake the basil dry.
- 29. Pluck the basil leaves off the stems.
- 30. Cut the Genießerblock (a type of cheese) into cubes.
- 31. Alternatively, crumble the Genießerblock roughly with your hands.
- 32. Set the steam cooking insert aside.
- 33. Season the Mediterranean vegetables to taste.
- 34. Plate the gnocchi with the vegetables.
- 35. Serve the dish with the Genießerblock and basil.
