🍽️ Gnocchi with Green Asparagus in Orange Cream Sauce

Ingredients
- Salt pinch
- green asparagus 2 bunch
- oranges 1 pc
- gnocchi, fresh 800 g
- heavy cream 200 ml
- pepper, black ground pinch
Instructions
- 1. Fill a large pot with about 4 liters of water and add salt. Bring the water to a boil.
- 2. Wash the green asparagus thoroughly. Peel the bottom third of the stalks and cut off the woody ends.
- 3. Add the asparagus stalks to the boiling salted water and cook for about 3 minutes.
- 4. Drain the asparagus in a colander. Keep the cooking water in the pot.
- 5. Rinse the asparagus immediately under cold water to fix the color.
- 6. Rinse an orange under hot water and finely grate about 1 teaspoon of the zest.
- 7. Halve the orange and squeeze out the juice.
- 8. Bring the collected cooking water in the pot back to a boil.
- 9. Cook the gnocchi for about 3 minutes in the bubbling water until they float to the surface.
- 10. Drain the gnocchi and let them drain well.
- 11. Heat the cream in a pan together with a ladle of the cooking water, the orange zest, and the orange juice.
- 12. Season the sauce with salt and pepper to taste.
- 13. Add the asparagus pieces to the sauce and cook them in it for about 3 minutes.
- 14. Portion the gnocchi onto plates.
- 15. Add the green asparagus and pour the orange cream sauce over it.
- 16. Enjoy your meal!
