  1. 1. Fill a large pot with about 4 liters of water and add salt. Bring the water to a boil.
  2. 2. Wash the green asparagus thoroughly. Peel the bottom third of the stalks and cut off the woody ends.
  3. 3. Add the asparagus stalks to the boiling salted water and cook for about 3 minutes.
  4. 4. Drain the asparagus in a colander. Keep the cooking water in the pot.
  5. 5. Rinse the asparagus immediately under cold water to fix the color.
  6. 6. Rinse an orange under hot water and finely grate about 1 teaspoon of the zest.
  7. 7. Halve the orange and squeeze out the juice.
  8. 8. Bring the collected cooking water in the pot back to a boil.
  9. 9. Cook the gnocchi for about 3 minutes in the bubbling water until they float to the surface.
  10. 10. Drain the gnocchi and let them drain well.
  11. 11. Heat the cream in a pan together with a ladle of the cooking water, the orange zest, and the orange juice.
  12. 12. Season the sauce with salt and pepper to taste.
  13. 13. Add the asparagus pieces to the sauce and cook them in it for about 3 minutes.
  14. 14. Portion the gnocchi onto plates.
  15. 15. Add the green asparagus and pour the orange cream sauce over it.
  16. 16. Enjoy your meal!
