  1. 1. Peel the red onions and cut them into wedges.
  2. 2. Heat 1 tbsp of oil in a pot over medium heat.
  3. 3. Add the onions and 1 tbsp of sugar to the pot.
  4. 4. Fry the onions for about 5 minutes until they are translucent.
  5. 5. Deglaze the onions with red wine.
  6. 6. Let the mixture simmer on low heat for about 15 minutes until the liquid has almost completely evaporated.
  7. 7. Season the onions with salt and pepper.
  8. 8. Set the onions aside, covered.
  9. 9. Clean the mushrooms if necessary using kitchen paper and quarter them.
  10. 10. Wash the rosemary and dry it.
  11. 11. Strip the rosemary needles from the stems and chop them finely.
  12. 12. Halve a lemon and squeeze out the juice.
  13. 13. Bring about 5 liters of salted water to a boil in a large pot.
  14. 14. Add the gnocchi to the boiling salted water.
  15. 15. Let the gnocchi cook for about 4 minutes.
  16. 16. Remove the cooked gnocchi with a slotted spoon.
  17. 17. Let the gnocchi drain in a colander.
  18. 18. Heat 2 tbsp of oil in a frying pan over high heat.
  19. 19. Fry the mushrooms for about 4 minutes over high heat.
  20. 20. Deglaze the mushrooms with 2 tbsp of lemon juice.
  21. 21. Stir in 2 tbsp of butter into the mushrooms.
  22. 22. Set the mushrooms aside on a plate.
  23. 23. Wipe the pan clean.
  24. 24. Heat 4 tbsp of butter and the chopped rosemary in the pan over medium heat.
  25. 25. Fry the gnocchi in it for about 4 minutes until golden brown, shaking the pan occasionally.
  26. 26. Add the mushrooms to the gnocchi.
  27. 27. Warm the mixture through for about 2 minutes.
  28. 28. Season with salt, pepper, and a little remaining lemon juice.
  29. 29. Plate the gnocchi and mushrooms.
  30. 30. Serve the dish with the red wine onions.
