🍽️ Creamy Gnocchi with Ham, Zucchini, and Lemon

Ingredients
- Salt pinch
- Lemons 1 pc.
- Zucchini 2 pc.
- Onions, yellow 2 pc.
- Black Forest ham 200 g
- Olive oil 2 tbsp
- Gnocchi, fresh 800 g
- Whipping cream 200 g
- Parsley, fresh 20 g
- Pepper, black ground pinch
Instructions
- 1. Fill a large pot with about 3 liters of water and add salt. Place the pot on the stove and cover it. Wait for the water to boil.
- 2. Rinse the lemon thoroughly under running water. Grate about 1 teaspoon of the zest. Cut the lemon in half and squeeze out the juice.
- 3. Wash the zucchini and cut off the ends. Grate the vegetable coarsely.
- 4. Halve the onions and remove the outer skin. Cut the onions into fine cubes.
- 5. Tear the ham into small pieces or cut it coarsely.
- 6. Heat 2 tablespoons of olive oil in a large pan over medium heat.
- 7. Add the onion cubes and the ham to the hot pan. Fry the mixture for about 2 to 3 minutes until the onions are soft and translucent.
- 8. Add the grated zucchini and a pinch of salt to the pan. Fry everything for another 3 minutes.
- 9. Add the gnocchi to the pot with the boiling salted water. Make sure the water is only gently bubbling and not boiling vigorously.
- 10. Let the gnocchi cook for about 5 minutes until they are done.
- 11. Set aside one cup of the gnocchi cooking water.
- 12. Drain the gnocchi in a colander and let them drain well.
- 13. Add the lemon zest, the whipping cream, and 3 to 4 tablespoons of the reserved cooking water to the pan with the zucchini mixture.
- 14. Bring the sauce in the pan to a boil. Then let it simmer gently over medium heat for about 2 minutes until it becomes creamy.
- 15. Season the sauce with salt.
- 16. Wash the parsley thoroughly.
- 17. Shake the parsley dry.
- 18. Pluck the parsley leaves from the stems.
- 19. Finely chop the parsley leaves.
- 20. Add the drained gnocchi and the ham to the zucchini-cream mixture in the pan.
- 21. Heat everything for about 1 minute over medium heat. Shake the pan well to mix everything.
- 22. If the sauce is too thick, add some of the reserved cooking water as desired to thin it out.
- 23. Add a splash of lemon juice, salt, and pepper, and season the dish accordingly.
- 24. Serve the gnocchi in deep plates.
- 25. Sprinkle the dish with the chopped parsley.
- 26. Serve the dish immediately and enjoy your meal!
