  1. 1. Fill a large pot with about 3 liters of water and add salt. Place the pot on the stove and cover it. Wait for the water to boil.
  2. 2. Rinse the lemon thoroughly under running water. Grate about 1 teaspoon of the zest. Cut the lemon in half and squeeze out the juice.
  3. 3. Wash the zucchini and cut off the ends. Grate the vegetable coarsely.
  4. 4. Halve the onions and remove the outer skin. Cut the onions into fine cubes.
  5. 5. Tear the ham into small pieces or cut it coarsely.
  6. 6. Heat 2 tablespoons of olive oil in a large pan over medium heat.
  7. 7. Add the onion cubes and the ham to the hot pan. Fry the mixture for about 2 to 3 minutes until the onions are soft and translucent.
  8. 8. Add the grated zucchini and a pinch of salt to the pan. Fry everything for another 3 minutes.
  9. 9. Add the gnocchi to the pot with the boiling salted water. Make sure the water is only gently bubbling and not boiling vigorously.
  10. 10. Let the gnocchi cook for about 5 minutes until they are done.
  11. 11. Set aside one cup of the gnocchi cooking water.
  12. 12. Drain the gnocchi in a colander and let them drain well.
  13. 13. Add the lemon zest, the whipping cream, and 3 to 4 tablespoons of the reserved cooking water to the pan with the zucchini mixture.
  14. 14. Bring the sauce in the pan to a boil. Then let it simmer gently over medium heat for about 2 minutes until it becomes creamy.
  15. 15. Season the sauce with salt.
  16. 16. Wash the parsley thoroughly.
  17. 17. Shake the parsley dry.
  18. 18. Pluck the parsley leaves from the stems.
  19. 19. Finely chop the parsley leaves.
  20. 20. Add the drained gnocchi and the ham to the zucchini-cream mixture in the pan.
  21. 21. Heat everything for about 1 minute over medium heat. Shake the pan well to mix everything.
  22. 22. If the sauce is too thick, add some of the reserved cooking water as desired to thin it out.
  23. 23. Add a splash of lemon juice, salt, and pepper, and season the dish accordingly.
  24. 24. Serve the gnocchi in deep plates.
  25. 25. Sprinkle the dish with the chopped parsley.
  26. 26. Serve the dish immediately and enjoy your meal!
