🍰 Crunchy gluten-free chocolate cookies

Ingredients
- butter 75 g
- sugar 100 g
- vanilla sugar 1 tsp
- flour, gluten-free 150 g
- cocoa powder 20 g
- baking powder 1 tsp
- shaved chocolate, dark 100 g
Instructions
- 1. Put the soft butter, sugar, and vanilla sugar into a large bowl.
- 2. Beat the mixture with a hand mixer and whisk until creamy.
- 3. Add the flour, cocoa powder, baking powder, and chocolate shavings to the bowl.
- 4. Mix the ingredients briefly with the mixer until a dough forms.
- 5. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 6. Shape the dough into a roll about five centimeters thick.
- 7. Cut about sixteen cookies from the roll.
- 8. Place the cookies with plenty of space between them on baking sheets lined with baking paper.
- 9. Press the cookies down slightly until they are about six centimeters in diameter.
- 10. Bake the trays one after the other in the preheated oven for about twelve minutes.
- 11. Remove the cookies when they are crunchy and lightly browned.
- 12. Let the cookies cool down completely.
- 13. Store the cooled cookies in airtight containers.
