🍰 Crispy Gluten-Free Cookies with Lemon Glaze

Ingredients
- butter 125 g
- Sugar 80 g
- Salt Pinch
- Flour, gluten-free 300 g
- Baking powder 1 tsp
- Eggs 1 pc
- Lemons 1 pc
- Powdered sugar 100 g
- Sugar pearls 25 g
Instructions
- 1. Take the butter out of the fridge to let it reach room temperature.
- 2. Put the butter, sugar, salt, flour, baking powder, and egg into a bowl.
- 3. Knead everything into a smooth dough.
- 4. Wrap the dough tightly in cling film.
- 5. Place the foil in the refrigerator for at least one and a half hours.
- 6. Preheat the oven to 175 degrees Celsius with top and bottom heat.
- 7. Lightly dust your work surface with flour.
- 8. Roll out the dough on the surface to about four millimeters thick.
- 9. Cut out various shapes with a diameter of four to five centimeters.
- 10. Place the cookies on a baking sheet lined with baking paper.
- 11. Bake the cookies for about twelve minutes until the edges turn slightly brown.
- 12. Let the cookies cool completely on a wire rack.
- 13. Wash the lemon thoroughly and cut it in half.
- 14. Squeeze the juice out of the lemon.
- 15. Sift the powdered sugar into a clean bowl.
- 16. Stir the powdered sugar with two tablespoons of lemon juice to form a thick glaze.
- 17. Fill the glaze into a freezer bag.
- 18. Seal the bag well.
- 19. Cut off a small corner from the tip of the bag.
- 20. Decorate the cooled cookies with the glaze.
- 21. Sprinkle the cookies with sugar pearls as desired.
- 22. Let the glaze dry completely.
- 23. Serve the finished cookies.
