  1. 1. In a pot, bring about 1 liter of salted water to a boil and cover. Halve the onions, peel them, and dice. Wash the chili pepper, remove the seeds, and chop finely. In a bowl, mix the minced meat well with the onions, chili pepper, and salt, and form small balls.
  2. 2. In a pan, heat the oil over high heat and fry the meatballs all around for approx. 8 minutes until crispy.
  3. 3. In the meantime, add the glass noodles to the boiling salted water, remove the pot from the heat, and let the noodles swell for approx. 5 minutes. Then drain and let them drip dry. Wash the pepper, remove the core and seeds, and dice.
  4. 4. Peel the garlic and chop finely. Halve the lime and squeeze out the juice. In a bowl, mix the garlic, lime juice, and soy sauce well. Combine the glass noodles with the pepper and the dressing. Wash the cilantro, shake it dry, and pluck off the leaves.
  5. 5. Arrange the salad on a plate or in bowls. Let the spicy meatballs drip dry on kitchen paper and distribute them on top. Garnish the glass noodle salad with the plucked cilantro leaves and serve. Enjoy your meal!
