🍽️ Fresh Glass Noodle Salad with Lime

Ingredients
- Salt pinch
- Glass noodles 400 g
- Carrots 2 pcs
- Pepper, yellow 1 pcs
- Spring onions 1 bunch
- Napa cabbage 0.5 pcs
- Organic limes 1 pcs
- Ginger, fresh 5 g
- chili pepper mix 0.5 pcs
- Cilantro, fresh 10 g
- Soy sauce 3 tbsp
- Oil 2 tbsp
- Brown sugar 1 tsp
- Peanuts 4 tbsp
Instructions
- 1. Bring about 1 liter of water with salt to a boil in a pot.
- 2. Pour hot water over the glass noodles in a bowl and let them soak for a few minutes.
- 3. Peel the carrots and cut off the ends.
- 4. Grate the carrots coarsely.
- 5. Wash the bell pepper and remove the core.
- 6. Cut the bell pepper into thin strips.
- 7. Clean the spring onions and cut off the root ends.
- 8. Dry the spring onions well.
- 9. Cut the spring onions diagonally into thin rings.
- 10. Wash the Chinese cabbage and remove the base.
- 11. Cut the Chinese cabbage into strips about 1 cm wide.
- 12. Halve the lime.
- 13. Squeeze the juice from the lime.
- 14. Peel the ginger.
- 15. Finely chop the ginger.
- 16. Wash the chili pepper.
- 17. Halve the chili pepper and remove the inside.
- 18. Finely chop the chili pepper.
- 19. Wash the cilantro thoroughly.
- 20. Shake the cilantro dry.
- 21. Pick the cilantro leaves off the stems.
- 22. Mix 2 tablespoons of lime juice, soy sauce, and oil in a bowl.
- 23. Add the ginger to the sauce.
- 24. Add the chili pepper to the sauce.
- 25. Add the spring onions to the sauce.
- 26. Add the bell pepper strips to the sauce.
- 27. Add the Chinese cabbage to the sauce.
- 28. Add the cilantro to the sauce.
- 29. Mix all ingredients well together.
- 30. Season the mixture with sugar.
- 31. Pour in the remaining lime juice.
- 32. Taste and adjust seasoning if necessary.
- 33. Drain the noodles.
- 34. Let the noodles drain well.
- 35. Chop the peanuts coarsely.
- 36. Gently mix the glass noodles into the salad.
- 37. Serve the salad on plates.
- 38. Sprinkle the chopped peanuts over the salad.
