🥤 Gin Meringue Cocktail with Lime and Raspberry

Ingredients
- Organic limes 2 pcs
- sugar 2 tbsp
- raspberries, fresh 10 pcs
- thyme, fresh 5 g
- mineral water, classic 100 ml
- Wild Burrow Raspberry and Thyme Slow Distilled Gin 120 ml
- ice cubes 4 tbsp
- eggs 1 pc
- powdered sugar 50 g
Instructions
- 1. Wash the limes thoroughly under hot water.
- 2. Cut the limes into eight wedges.
- 3. Place the lime wedges into a large glass.
- 4. Add the sugar, raspberries, and thyme sprigs.
- 5. Muddle the ingredients with a pestle until the juice is released.
- 6. Strain the mixture through a sieve to catch the liquid.
- 7. Fill glasses with ice cubes.
- 8. Pour the collected juice over the ice.
- 9. Top up the drink with gin.
- 10. Finish the glass with sparkling water.
- 11. Separate the egg and use the yolk for another purpose.
- 12. Whip the egg whites in a bowl using a hand mixer with a whisk attachment until stiff.
- 13. Add the powdered sugar spoonful by spoonful and continue beating until the mixture is thick and glossy.
- 14. Fill the egg white mixture into a piping bag.
- 15. Pipe the mixture onto the finished cocktails.
