🍽️ Bacon-Wrapped Turkey Breast with Fried Herb Spaetzle and Fresh Lamb's Lettuce

Ingredients
- Corn salad 150 g
- Parsley, fresh 20 g
- Oil 6 tbsp
- Honey 3 tsp
- Radishes 1 bunch
- Pears 1 pc.
- Butter 1 tsp
- Salt 1 tbsp
- Spätzle, fresh 800 g
- Turkey breast fillet 600 g
- Bacon 150 g
- Pepper, black ground pinch
- Balsamic vinegar, light 2 tbsp
- Olive oil 3 tbsp
- Sugar pinch
Instructions
- 1. Wash the parsley thoroughly and dry it well.
- 2. Pluck the parsley leaves from the stems.
- 3. Place the parsley leaves, 3 tablespoons of oil, 1 teaspoon of honey, and 5 tablespoons of cold water into a tall container.
- 4. Blend the mixture into a smooth sauce.
- 5. Set aside the meadow oil.
- 6. Wash the lamb's lettuce.
- 7. Dry the lamb's lettuce in a salad spinner.
- 8. Rinse the radishes.
- 9. Trim the ends of the radishes.
- 10. Slice the radishes thinly.
- 11. Wash the pear.
- 12. Quarter the pear.
- 13. Core the pear.
- 14. Cut the pear into cubes of about 1 cm.
- 15. Preheat the oven to 150 °C with fan.
- 16. Heat 2 tablespoons of oil and 1 teaspoon of butter in a pan over medium heat.
- 17. Salt the pan.
- 18. Fry the spaetzle for about 10 minutes, turning occasionally.
- 19. Cover the spaetzle while frying.
- 20. Rinse the turkey breast.
- 21. Dry the turkey breast with kitchen paper.
- 22. Cut the turkey breast into three pieces.
- 23. Place two slices of bacon side by side.
- 24. Wrap a piece of turkey breast in the bacon.
- 25. Heat 1 tablespoon of oil in a pan until hot.
- 26. Fry the turkey breast on the overlapping bacon side for about 2 minutes.
- 27. Season the turkey breast with pepper.
- 28. Turn the turkey breast.
- 29. Reduce the heat.
- 30. Cook the turkey breast covered for about 8 minutes.
- 31. Place 2 teaspoons of honey, balsamic vinegar, and 3 tablespoons of olive oil in a bowl.
- 32. Whisk the ingredients for the dressing.
- 33. Season the dressing with salt, pepper, and sugar.
- 34. Toss the dressing with the salad.
- 35. Fold the meadow oil into the spaetzle.
- 36. Season the spaetzle with salt and pepper.
- 37. Remove the turkey breast pieces from the oven.
- 38. Halve the turkey breast pieces.
- 39. Plate the turkey breast.
- 40. Serve the herb spaetzle alongside.
- 41. Arrange the lamb's lettuce with radishes and pear pieces in bowls.
- 42. Serve everything together.
