Ingredients
- Vine tomatoes 1000 g
- Brown sugar 2 tsp
- Salt 2 tsp
- Pepper, black ground pinch
- Thyme, fresh 20 g
- Basil, fresh 20 g
- Rosemary, fresh 20 g
- Garlic cloves 2 pcs
- Olive oil 500 ml
Instructions
- 1. Preheat the oven to 100 degrees Celsius with fan setting.
- 2. Slice the tomatoes into pieces about one centimeter thick.
- 3. Place the slices side by side on two baking sheets lined with baking paper.
- 4. Sprinkle some sugar, salt, and pepper over the tomatoes.
- 5. Dry the tomatoes in the oven for three hours.
- 6. Remove the tomatoes when they are still slightly soft.
- 7. Let the tomatoes cool down briefly on the tray.
- 8. Carefully peel the tomatoes off the baking paper.
- 9. Let the tomatoes cool down completely.
- 10. Wash the herbs and dry them thoroughly.
- 11. Pluck the leaves or needles off the stems.
- 12. Peel the garlic and cut it in half lengthwise.
- 13. Place the cooled tomatoes, garlic, and herbs into a clean jar.
- 14. Fill oil into the jar until everything is completely covered.
- 15. Seal the jar tightly.
- 16. Let the tomatoes marinate in the refrigerator for two to three days.
- 17. Drain the tomatoes before serving.
- 18. Serve the tomatoes, for example, with fresh baguette.
