🍰 Spooky Ghost Muffins

Ingredients
- butter 125 g
- sugar 480 g
- eggs 5 pcs.
- buttermilk 200 ml
- wheat flour, Type 405 250 g
- baking powder 8 g
- cocoa powder 3 tbsp
- salt pinch
- vanilla sugar 1 packet
- fruit gums, bats 100 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius.
- 2. Place soft butter pieces, 150 grams of sugar, and 2 eggs into the mixing bowl.
- 3. Mix the ingredients with the measuring cup inserted for 2 minutes on speed 4.
- 4. Add cold buttermilk and mix everything for 1 minute on speed 3.
- 5. Add flour, baking powder, cocoa powder, and a pinch of salt to the bowl.
- 6. Mix the mixture for 1 minute on speed 3 until a smooth batter forms.
- 7. Push the mixture down from the inner wall of the bowl using a spatula.
- 8. Mix the mixture again for 20 seconds on speed 4.
- 9. Line a 12-cup muffin tin with paper liners.
- 10. Distribute the batter evenly among the cups.
- 11. Bake the muffins for approximately 25 minutes.
- 12. Perform a skewer test by inserting a wooden skewer into a muffin.
- 13. Extend the baking time by a few minutes if necessary.
- 14. Let the muffins cool down on a wire rack.
- 15. Set the oven to 100 degrees Celsius with fan (convection).
- 16. Place 330 grams of sugar into the mixing bowl.
- 17. Grind the sugar for 10 seconds on speed 8.
- 18. Repeat the process if necessary to obtain fine powdered sugar.
- 19. Separate 3 eggs and use the yolks for another purpose.
- 20. Insert the whisk attachment into the mixing bowl.
- 21. Add the egg whites to the powdered sugar in the bowl.
- 22. Whip the mixture for 10 minutes on speed 2 at 37 degrees Celsius.
- 23. Add vanilla sugar.
- 24. Continue whipping the mixture for 5 minutes on speed 2 at 37 degrees Celsius.
- 25. Fill the meringue mixture into a piping bag.
- 26. Pipe 12 large dollops onto a baking sheet lined with parchment paper.
- 27. Bake the meringues in the preheated oven for approximately 1.5 hours.
- 28. Let the meringues cool down in the turned-off and closed oven.
- 29. Cut licorice fruit gums to shape with a sharp knife as desired.
- 30. Mix a little powdered sugar with a very small amount of water to make a sugar glaze.
- 31. Stick eyes and mouths made of licorice onto the meringue ghosts using the sugar glaze.
- 32. Level the tops of the muffins with a knife.
- 33. Attach the ghosts to the muffins using a little sugar glaze.
