🍝 Sliced Schnitzel Strips with Mushrooms in Cream Sauce over Pasta

Ingredients
- Salt Pinch
- Onions, yellow 1 pc
- Mushrooms, white 300 g
- Parsley, fresh 20 g
- Pork Schnitzel from the top round 600 g
- Penne Rigate 500 g
- Butter 2 tbsp
- Pepper, black ground Pinch
- Rose Paprika Pinch
- Whipping Cream 200 ml
Instructions
- 1. Bring about 5 liters of water with salt to a boil in a large pot.
- 2. Halve the onion, peel it, and chop it finely.
- 3. Wipe the mushrooms with a kitchen towel if necessary and slice them.
- 4. Wash the parsley thoroughly, shake it dry, remove the coarse stems, and chop it finely.
- 5. Rinse the schnitzel, pat them dry with kitchen paper, and cut them into strips.
- 6. Cook the pasta in the boiling salted water for about 9 minutes.
- 7. Drain the pasta in a colander.
- 8. Reserve about one cup of the pasta cooking water in the process.
- 9. Melt the butter in a frying pan over medium heat.
- 10. Fry the cut schnitzel strips for approx. 2 minutes.
- 11. Add the onions and mushrooms and fry everything together for about 4 minutes.
- 12. Season the mixture with salt, pepper, and paprika.
- 13. Deglaze the mixture with cream.
- 14. Stir in about 150 ml of the reserved pasta water.
- 15. Let the sauce simmer on low heat for approx. 5 minutes.
- 16. Add the pasta to the pan and mix it well with the sauce.
- 17. Adjust the seasoning to taste.
- 18. Plate the sliced meat with mushrooms.
- 19. Garnish the dish with the chopped parsley.
